She responded that in market testing conducted by the milk manufacturers, the 3 added teaspoons seemed to be the magic number that got kids to drink the most milk. She did not disagree that less sugar would be better, but added that right now that’s what manufacturers are selling because that’s what kids like.

    Chocolate Milk In Schools: Ban It Keep It Or Change It

    Its time for a truce in the chocolate milk wars. A conflict over whether schools should offer flavored milk has been raging for years, pitting advocates for better school food against each other. While chocolate milks supporters insist the health benefits of milk outweigh any possible harm from extra sugar, its foes allege that chocolate milk is just like soda or candy. Meanwhile, as school funding shrinks, and costs for food, fuel and labor continue to rise, the chocolate milk battle divides advocates, just when it is most important that they join forces and work together.

    To recap the battle thus far: flavored milk accounts for about 70% of the milk served in US schools. Some schools offer it for both breakfast and lunch, others only at lunch. Some schools have banned flavored milk altogether, but studies sponsored by the dairy industry show that when this happens, milk consumption overall drops about 37%.

    Flavored milks foes say that such studies are biased. If only plain milk is offered, they say, children will happily drink it thus far there have been no studies produced to back up that claim. Foes of sweetened milk also link its consumption with increased obesity, but again there have been no studies done to provide support for that view.     If you follow health news at all, youve probably noticed this nutrition controversy getting a lot of news coverage. Heres one story.

    Heres what we know:

    Milk contains significant amounts of calcium and is fortified with vitamin D, important for childrens bone development and growth. Milk consumption has decreased significantly in the United States, by about 1/3 since 1968.

    Chocolate milk contains added sugars and therefore more calories that can lead to more overweight and obesity. In the United States, 1/3 of children are already overweight and obese and at higher risk for chronic diseases such as type 2 diabetes, heart disease and cancer.

    According to a study by the Centers for Disease Control , in 2006 New York City public schools began switching from whole milk to lowfat and fat free milk. The milk industry warned that student demand for milk would decrease. Although it did initially decrease, by 2009 children actually did drink more milk than in 2006.

    First, some basics: It all starts with cacao beans from the cacao tree.

    Cacao beans contain protein, fiber, and are a great source of minerals like iron and magnesium. Theyre also rich in powerful antioxidants, particularly flavonoids like catechin, epicatechin, and procyanidins. In fact, cacao is richer in antioxidants than most fruits and vegetables. Because of that, eating chocolate has been linked to all kinds of health benefits. Research shows associations with a lower risk of heart disease, lower blood pressure, and stress relief, among other benefits.

    This is where things start to get complicated. While both dark and milk chocolate contain that healthy ingredient, the percentage of it compared to all of the other stuff thats on the ingredient list is what matters.     Then, the other stuff: If a bar contains only 10% cacao, whats the rest of it? You guessed it: sugar and milk!     Minerals or milk salts, are traditional names for a variety of cations and anions within bovine milk. Calcium, phosphate, magnesium, sodium, potassium, citrate, and chloride are all included and they typically occur at concentrations of 540 mM. The milk salts strongly interact with casein, most notably calcium phosphate. It is present in excess and often, much greater excess of solubility of solid calcium phosphate. In addition to calcium, milk is a good source of many other vitamins. Vitamins A, B6, B12, C, D, K, E, thiamine, niacin, biotin, riboflavin, folates, and pantothenic acid are all present in milk.
