St Germain was released in 2007, but the story of the liqueur started already six years before. One evening in 2001, New York-born Rob Cooper went into a bar in London after a long day at work.
Little did he know that the bartender was about to serve him a drink that would eventually change his life.
Cocktails Made With Prosecco
There are quite a few popular cocktails made with Prosecco. The Aperol Spritz is a very well known drink, which we educated you about in a previous blog post, that is made with Aperol, club soda and Prosecco. Another very highly regarded Prosecco drink, the Hugo, is a spin-off of the Aperol Spritz. It too includes club soda and Prosecco, but instead of bittersweet and citrusy Aperol, its made with a sweet and floral elderflower liqueur known as St. Germain, and rather than garnish with citrus, the Hugo uses fresh mint and some recipes also call for lime.
Just like the Aperol Spritz, the Hugo is another Italian-born cocktail. This drink is like the Aperol Spritz delicate, flirty cousin. Its light and subtly sweet, although equally as fragrant and refreshing, just in their own individual ways. If you cannot find St. Germaine elderflower liqueur, you can substitute it with an elderflower syrup instead.
Although it really is a tasty liqueur and it is displayed in a beautiful bottle, this ingredient is where all the extra, unnecessary sugar comes into play. Once the maceration process of the elderflower blossoms is complete, the resulting liquid is blended with a distilled spirit referred to by the Fresh as eau-de-vie de vin, water, SUGAR, and a neutral grain spirit to create the final product known as St. Germain.

The cocktail he had in front of him was infused with elderflower blossoms, and it blew Cooper away. He had tried elderflower syrups before, but he found the fresh and fragrant infusion was different.
Inspired by the drink in front of him, he started thinking about how he could bring this fresh, fragrant, and floral taste into a liqueur.
To be able to focus on his elderflower liqueur, Rob Cooper had to leave the family business, which produced and sold Chambord. -At least he was staying within the industry.

St Germain Liqueur: What It Is And What To Do With It

This year the local elder trees were absolutely loaded with elderflowers, so I decided to make this delicious elderflower liqueur!

Can I tell you how amazing this elderflower liqueur is? It is so incredibly good, and it makes a great summer cocktail! I like to simply combine it with some sparkling mineral water, and in my opinion thats all you really need.
If you want to get more fancy than that, here are some amazing sounding elderflower liqueur cocktail recipes to try:
How To Make Elderflower Liqueur
Depending on the size of the elderflowers you collect, you will need about 20-30 whole flower heads for this liqueur recipe.
Although its a bit labor intensive, its important to cut the flowers off with as little stem as possible attached. This is because the stems contain a toxic compound and can cause stomach upset in large amounts in some people.
If you dont have access to fresh elderflowers, dried elderflowers can also be used, just use about half as much as fresh.
Fill a quart jar with the elderflowers, leaving an inch or two of space at the top.
Pour a 750ml bottle of vodka over the elderflowers, then top the jar with lemon slices to keep the flowers submerged under the vodka.
Cover the jar with a lid and put it in a cool and dark place to infuse for 2-4 weeks.
When ready to use, strain out the elderflowers with a fine mesh sieve, then add the optional honey or sugar and stir well or shake to combine.
The elderflower liqueur can be consumed right away, or aged longer if desired. It will keep indefinitely!

Many small white flowers are in bloom in Summer, and to the untrained eye, can appear to be very similar to elderflower. Some of the different trees, flowers and plants which can be mistaken for elderflower include: cow parsley, cowbane, pignut, hemlock, pyracantha, red osier dogwood, rowan and hawthorn.

The taste of elderflower is pretty unique. It’s hard to describe and even harder to compare. The taste of St Germain elderflower liqueur is light, sweet, citrusy, and floral. You can also find fruity notes in it like pear and passion fruit.
The consistency of the liqueur is thick and almost syrupy. It’s too viscid for drinking neat. But used in mixed drinks, it creates a wonderfully rich mouthfeel. -Similar to adding rich or gum syrup to a cocktail.

The Invention Of St Germain
First, he had to find the right place where Sambucus nigra – black elder- grows. He identified the French Savoy region to be perfect for harvesting the precious flowers.
The problem was convincing friends and family that there was a big enough market for these flowers to operate profitably.
Not even his father, a liqueur magnate himself, believed in the idea. Allegedly, he offered to hire him back once he had failed. And that wasn’t the only issue
Processing the flowers turned out to be a nightmare. Pressing the pedals too hard created a bitter taste. Dehydrating or freezing them killed their aroma and flavor. The only way was to use freshly harvested blossoms and let them infuse in alcohol.
It took almost six years until Cooper was able to launch his product. But as they say, good things take time. St Germain quickly became a staple in bars around the world.
In 2012, Cooper sold St. Germain to the Bacardi Group. Sadly, four years later, at the age of only 39, he did in his Santa Barbara home.

How To Substitute St Germain
As the taste of the liqueur is so unique, there aren’t many options to substitute it in a mixed drink.
Your best bet is another elderflower liqueur. My preferred alternatives are the elderflower liqueurs from Edinburgh and De Kuyper. These liqueurs are more common in Europe. Yet, you can sometimes find them on store shelves elsewhere, too.
Italicus is another option to replace St Germain in a cocktail. However, note that there’s no elderflower in the list of ingredients. Therefore, it doesn’t have the same flavor profile.
Still, Italicus is also intensely floral and often used in similar drinks. For me, it is an underrated alternative to elderflower liqueur.
