How To Compensate For Volume In A Recipe

The charts below are converting so that you have the same amount of sweetnessin your recipe.

But lets say the recipe calls for a cup of a sweetener and the conversion calls for just 3 Tablespoons, youll need to add some bulk in a different way.

Generally, youd use more of the flour called for in the recipe.

But if youre going in the opposite direction , youll need to add more liquid.

The bottom line that you need to remember when converting sweeteners is that it may change how the recipe turns out.

If youre not happy with the finished product, dont give up on a particular recipe!

Just try the recipe again with the exact ingredients used by the recipes creator, or make adjustments to make it more wet or dry .

Luckily We Have Choices That Are Not Sugar

While these choices may be natural or not so natural, they are not sugar. For me, that means my blood sugar will not spike and fall. For you, that may mean something different.

These days, when I post recipes, I will say âalternativeâ.Also, I will say the amount to use as per the sugar equivalent since not all equivalents are measured the same. Hence, if your sugar alternative is not measured in 1:1 with sugar you may need to do some math to make your amounts equivalent to the recipe amounts. For example, if I say â1 cup equivalent to sugarâ then I meant whatever amount of your sweetener would be equal to 1 cup of sugar because you may be using something different than I use.

Because we all know that math can be tasking on the brain, here are some hints. After all, who wants to use their brain to do math when you are in give me something almost sweet to eat? Not me.My listing is of common sugar alternatives that people like to use and not necessarily any that I would promote or suggest as you should use what works best for you.

Keep in mind that different brand names will have sweeteners in different packaging etc that may differ in equivalents.

Here are equivalents to Measure Sugar Alternatives

HOW TO SUB HONEY WHEN BAKING

When baking with honey, there are a few characteristics that make it different than baking with sugar.

Here are the 3 main differences:

  • Honey browns more quickly in the oven or even in the frying pan . The solution is baking honey-sweetened batters at a lower temperature.
  • Honey is heavier, denser and wetter than sugar. Increasing the quantity of leavening just slightly helps to counteract this.
  • Honey is sweeter than sugar AND has a stronger flavor. Decreasing the amount of honey in a recipe that originally called for sugar will prevent your baked good from being too sweet or tasting too strongly of honey, which doesnt allow other flavors to come through.
  • Below are the conversions to help you make adjustments. As youll notice, there is also the instruction of potentially reducing the liquid in a recipe. This refers to pancake-like recipes that often call for milk. Because honey makes baked goods wetter, it is helpful to reduce milk or other liquid ingredients to compensate.

    Avoiding Side Effects Of Sugar

The natural low carb sweeteners in this article are all pretty mild when it comes to side effects. But, there can be some.

If you have a sensitive stomach, its best to avoid xylitol and prebiotic fiber syrups. Erythritol is usually okay, with a few people being rare exceptions. If this is an issue, sometimes you can get used to erythritol by introducing it slowly.

The keto sweetener with the least side effects is allulose, because its chemically most similar to sugar .

Stevia and chicory root may cause headaches for people that are allergic to ragweed, birch, and similar plants. Chicory root may cause other allergic reactions as well.

Again, using a low carb sweetener blend can help reduce side effects because you arent getting too much of any one sweetener. If you notice a reaction to a particular type, try another.

    Powdered Vs Granular Sweeteners

Most low carb sweeteners are granular, like sugar. However you may also find a low carb sweetener thats powdered.

What do you do if a recipe calls for a powdered sweetener but you only have a granulated sweetener?

How about if the low carb sweetener in the recipe is granular but you only have a powdered sweetener?

The good news is the conversion amounts stay the same!

If you have powdered sweetener and the recipe calls for granular, you dont need to change anything. Just convert the amount.

However, if a recipe specifically calls for a powdered sweetener, it may be because of texture. Particularly if what youre making isnt being baked.

For instance, if youre making a frosting or something where a granular sweetener wont dissolve well, you may want to grind up the sweetener you have on hand.

Sugar Alcohol Sweeteners Erythritol & Xylitol

Sugar alcohols can occur naturally in fruits and vegetables, or be produced by fermenting plant sugars. Because they are not well absorbed or metabolized by the body, they contain fewer calories and have a smaller effect on blood glucose levels.

For the same reason, they can cause stomach upset if used excessively. This is particularly true for ones that are not absorbed. Their impact on blood sugar and potential for side effects varies depending on the type of sugar alcohol.

Contrary to what some people may believe, sugar alcohols are not artificial sweeteners. There is some processing involved to achieve the granulated sweeteners you can purchase for home use, but this is no less natural than the processing needed for coconut sugar, maple syrup, or white table sugar. You can also choose to buy ones that are guaranteed non-GMO and/or organic.

Honey As A Substitute In Small Recipes

To convert smaller portions of sweetener in baked goods, like individual mug cakes, use slightly more than 3/4 the amount of honey as you would sugar, or decrease by 1 to 2 teaspoons.

So if the recipe calls for 2 Tablespoons of sugar, use 4 to 5 teaspoons of honey, depending on how sweet you want the cake. If you want the cake just as sweet, use 5 teaspoons.

Keep the rest of the recipe the same.

    Types Of Keto Sweeteners

Which sugar-free sweetener to use is largely a matter of preference. I like monk fruit, erythritol and allulose, or blends of them, the best, but they all have pros and cons. There are 3 main categories of keto friendly sweeteners:

  • Sugar Alcohols Including erythritol and xylitol.
  • Plant-Based Sweeteners Including monk fruit, stevia, and chicory root.
  • Allulose A new natural keto sweetener thats in a category by itself.

The Belly Fat Cure...PurpleRosy Style...: Chocolate Flour

The number one question I get in baking recipes is people asking if they can use a different sweetener. How would this turn out if I use erythritol vs stevia? Can I use this or that?

The answer, usually, is it depends.

There are many factors that go into choosing sugar substitutes for baking. Here are the main ones and the potential issues

    Pyure All Purpose Stevia Sweetener

Pyure All Purpose Stevia Sweetener is another stevia and erythritol blend. This particular blend only requires half the amount to sweeten like sugar. In other words, you would only need 1/2 cup of Pyure All purpose Stevia Sweetener to replace 1 cup sugar.

This is not to be confused with Pyures stevia extract product, which only has stevia as an ingredient. This product is way sweeter and you would only need 1/4 tsp to replace 1 cup sugar. For this reason, it is not recommended in baking or other recipes that require extra bulking.

Pyure also has a confectioners sugar substitute for any specialty recipes requiring it.

Ratio Of Wet To Dry Ingredients

People often ask if they can replace a liquid sweetener with a granulated one, or vice versa. Another common question is wanting to replace a granulated sweetener, like erythritol, with a very concentrated one, like pure stevia. The answer is usually no.

The problem with these swaps is that it alters the ratio between wet and dry ingredients. If that ratio changes, the end result wont have the same texture or consistency. It could fall apart or be too dense. It could be too dry or too wet.

Low Carb Sweetener Consistency For Drinks Sauces And Frosting

One big difference between low carb sweeteners and sugar is their ability to dissolve. This is particularly true for granulated sugar-free sweeteners, like erythritol, xylitol, and blends of them. Besides, erythritol can crystallize, making the problem worse.

The most noticeable foods where granulated low carb sweeteners can be problematic are things that are supposed to be smooth drinks, sauces, frostings, and so on.

You have 2 choices when you need a smooth consistency:

  • Use allulose. Allulose dissolves just like sugar! Get it in powdered form for optimal dissolving, but even the granulated or crystallized versions dissolve quite well.
  • Use powdered or liquid sweeteners, which dissolve better Try powdered erythritol, powdered monk fruit blend, or liquid stevia for these applications.

âMy personal opinion between the two is to opt for stevia. Stevia extracts are much less processed than Truvia and the key is to look for products that are 100% pure stevia extract. The tricky thing about stevia is that it is more expensive than Truvia and cane sugar. My recommendation is to use stevia when you want to reduce the sugar content in baking or cooking since you can use less stevia than you would sugar.â
