The terms gluten-free and dairy-free seem to be everywhere lately. Many people go gluten-free and dairy-free to help manage chronic disease, food sensitivities, and inflammation.

Both gluten and dairy are common allergens and and can cause issues in many people. But, what are the best ways to get started on a gluten-free and dairy-free diet?

Just A Little Bit Wont Hurt Me Part 1 Gluten Dairy & Sugar

One of the things I often hear is a little bit wont hurt me, and that is referring to things like eating a little bit of gluten or a little bit of dairy or a little bit of sugar.

When patients are really trying to change things like their detailed cholesterol panel like a Boston Heart, Cleveland Heart or theyre trying to get rid of their allergies or theyre trying to improve their metabolism and lose weight or improve their cardiovascular disease or get rid of their autoimmune disorders, what I find is that the more meticulous my patients are about getting out all of the gluten, all of the dairy and sugar, the better all of those things are.

So even very small amounts can make a huge difference in shifting the bodys metabolism and even your gene expression. The immune system response to our food is something that specialists can write books about to fully elaborate and explain, but to make it in a framework thats easy to understand, the molecules of food really inform our body about what genes to express and what our immune system should be doing.

Like if we get a little bit salmonella in our food, our bodies need to be zipping the salmonella out so we dont get really sick. So there would be a very strong immune system response to that. Well the same thing that can happen with food, very different than just the traditional food allergy, like a peanut allergy, where people go into anaphylaxis.

Gluten-free diets are more likely to be deficient in nutrients like zinc, calcium, and fiber (

Speaking of test results, how can you determine if you have issues with gluten whether its intolerance or just sensitivity? Blood tests can be used to diagnose celiac disease that indicates gluten intolerance. These tests either look for antibodies or antigens in your blood. If these blood tests come back positive for celiac disease, your doctor will likely order an endoscopy to verify the results and check for damages.

Unfortunately, youre not able to test for gluten sensitivity. However, there are questionnaires that you can take that can help you determine if you do indeed have a gluten sensitivity.

Transitioning to a gluten and dairy-free diet can feel like an intimidating leap to make but it doesn’t have to be. In fact, the majority of whole foods are naturally gluten and dairy-free, and new gluten and dairy-free food options in grocery stores are making it easier to find compliant foods than ever before. By focusing on all the foods you can still eat, learning how to read a nutrition facts label, understanding hidden ingredients, and finding gluten and dairy-free substitutes for some of your favorites, you can build a diet that suits your dietary needs without sacrificing delicious food.

Animal & Plant Proteins

Meat, poultry, and fish will be your most expensive grocery items, so budget accordingly and consider eating sparingly to reduce cost. Its better to have a little well-sourced meat in your diet than a lot of factory farmed meat.

Choose 100% grass-fed, grass-finished red meat. Poultry and eggs are best when pasture-raised. Choose wild game meat over farmed. Fish and shellfish should be purchased wild-caught and sustainably-sourced whenever possible.

Any soy products should be certified organic, as these are heavily genetically modified and sprayed when conventional. Learn more about the potential dangers of soy products and the safest ways to eat soy.

To save money, consider buying in bulk from a local source. Frozen meat and fish is also perfectly acceptable. In addition, canned fish is very affordable and nutrient-dense.

I Made Sure To Buy Groceries That Were Gluten

According to Whats Good by The Vitamin Shoppe, the nutrients I would need to replace when cutting out dairy were protein, vitamin D, calcium, phosphorus, potassium, vitamin A, magnesium, zinc, and probiotics.

It sounded like a big list just for cutting out one food group, but determined to stick with the diet, I found foods that would replace each nutrient: tofu for protein and calcium, mushrooms for vitamin D, almonds for phosphorus, magnesium, and zinc, bananas for potassium, spinach for vitamin A, and sauerkraut for probiotics.

According to Very Well Health, the nutrients I would need to replace when going gluten-free were vitamin B6, folate, vitamin D, calcium, iron, vitamin B12, thiamin, riboflavin, and niacin â I was surprised by this long list.

I wasn’t looking forward to having to purchase so many additional foods to meet my nutritional needs. Luckily, I already had calcium and vitamin D covered with my dairy-replacement purchases, the spinach I had would also provide folate, the almonds have riboflavin, and tofu has a decent amount of iron.

To complete my grain-free nutritional needs, I bought chickpeas for vitamin B6, beans for thiamin, and I had peanuts on hand for niacin. I already take vitamin B12 supplements that were recommended by my doctor when I went vegetarian, so I left that one out of my purchases.

Getting Rid Of Gluten


People who experience fatigue, itchy skin or digestive issues might blame foods like pasta, bread and baked goods. Thats because they all contain the protein gluten, which can cause those symptoms if you have gluten intolerance or celiac disease. While going gluten-free can help eliminate symptoms like bloating and cramping if you have an allergy or sensitivity, having an intolerance is actually pretty rare. Not All Food Groups Are Created Equal

During the reintroduction process after Whole30, you incorporate each new food group that you eliminated back into your diet gradually, to see how your body reacts. During this time of Whole30, I realized that just because I felt sensitive to peanuts, which are a legume, does not mean that all legumes affect me. Reintroducing food groups takes time, care, and attention to how each food is making you feel.

For example, when I reintroduced gluten, I became incredibly bloated and uncomfortable. When I had non-gluten grains, such as rice or quinoa, I had no reaction. Its important to listen to how your body reacts to certain food groups and decide what you want to keep and eliminate in your diet. This isn’t to say that I’ll never eat bread again, but when I do, I know and am prepared for how I will feel afterwards, which makes me think twice before reaching for that bread basket.

This one I feel is important to point out, because I think many folks tend to be drawn to things like soy milk and soy products and there is extensive research that shows that soy can be an endocrine and reproductive system disruptor and cause more harm than good especially for those with thyroid disorders.

The same can be said for dairy-free milks with carageenan, a potential carcinogen. Im not telling you to eat certain things or not, but I do recommend digging in and doing your research before making any major shifts in the foods youll be bringing into your life as a result of removing gluten and dairy.

At First It Was Fun Looking Up New Recipes For The Week

I enjoyed looking online to find recipes that would fit with my new restrictive diet. I turned to some vegan recipes, which I knew would already be dairy-free, so all I would have to look for was options without any grains.

We love to make these gluten and dairy free cut-out sugar cookies for every holiday. These are so soft and delicious you cant eat just one! Made with a gluten free flour blend, dairy free butter, and granulated sugar they are very easy to make and turn out great every time!

My mini and I love to bake together. We have a kitchen helper stool that my husband made that she uses all the time to help me bake. Our kitchen ends up a disaster after she helps me every time but it is all worth the memories. Most recently she helped me to whip up a batch of these delicious sugar cookies. Then we rolled out the dough and cut-out hearts and arrows for Valentines Day. Weve used this same recipe to make cut-out cookies for Halloween, opening deer-hunt weekend , and Christmas this past year as well. The cookies have turned out delicious everytime!

Gluten Free Flour Make sure when baking these cookies you use a gluten-free flour blend that includes xanthan gum already. This will ensure a perfect texture cookie. I always use the King Arthur blend gluten-free flour with these.

Dairy Free Butter Our favorite dairy free butter for baking and cookies are the Country Crock Plant Butter sticks. They taste just like the real thing in baked goods and the texture of these butter sticks help the cookies to be flaky and buttery. You would never know its not real butter!
