At Chelsea, its our job to turn raw sugar into what you buy at the supermarket. We get a lot of raw sugar deliveries at the Chelsea Refinery wharf – loads as big as 31,000 tonnes, every 5-6 weeks!
Its unloaded and stored in a sugar mountain in our huge bulk storage warehouse, before being taken to the mixer. There we mix it with hot, sticky sugar syrup, which softens the outside coating on the crystals. These react to create a chalk that absorbs any dissolved impurities so that they can be easily filtered out.
To make the raw liquor into pretty white sugar crystals, a carbon decolourising station absorbs the colour, and an ultra violet light sterilises it. The mix is then boiled to get rid of any extra water and so white crystals will form. These get separated from the syrup in a centrifugal again, and then dried with very dry air, ready to be packed up for you
The leftover syrup is either used to refine more sugar, or is made into soft brown sugar, golden syrup and treacle.

How Sugar Is Made
GROWING & HARVESTING
Commercial sugarcane is planted from stalk cuttings and placed in furrows five feet apart. After approximately 12 months, the mature sugarcane is ready for harvest. Growers average four harvests from a single planting. The harvesting campaign begins in mid-October and runs through mid-March or approximately 150 days.
The Cooperative harvests an average of 600 acres per day during daylight hours. Using a single-row, combine-style harvester, the cane is cut at the base of the stalk, transferred into in-field wagons and loaded in semi-trailers for transport to the processing facility. A typical harvesting unit contains three or four harvesters operating in tandem with six to eight tractors and a string of in-field wagons.
About 70,000 acres are harvested each season, producing more than three million tons of sugarcane.
PROCESSING
The Cooperative has one of the largest mills in the world. Operating 24-hours a day during the harvest season, Glades Sugar House grinds as much as 26,000 tons of sugarcane per day. State-of-the-art processing involves separating the natural sugar juice from the stalk then concentrating the juice to produce raw sugar crystals and blackstrap molasses.
Each portion of the sugarcane stalk is used. The fibrous portion of the stalk, called bagasse, is used as a fuel source conserving more than 31 million gallons of fuel oil each year. The annual fuel savings is the equivalent of powering 79,000 households per year.

Problems With Monitoring Sugarcane Burning Pollution
The sugarcane industry insists it complies with Clean Air Act standards and that federal monitoring says the Glades have higher air quality than average. Technically, this is correct, but only because of a measurement loophole.
An investigation by ProPublica and The Palm Beach Post earlier this year found that there was only one air quality monitor in the area around the sugarcane fields, and its been broken for eight years. And it might not matter if the monitor was working correctly anyway. Compliance with the Clean Air Act is determined by the 24-hour average of particulate matter in the air, but because individual cane fields dont burn very long, pollution from the burning fields happens in quick episodes. So while the average amount of pollution detected over a 24-hour period might not be enough to trigger federal regulators to take action, ash and smoke may spike in short, intense episodes that are enough to set off asthma attacks and other problems. Investigators using their own monitors found that during some time windows, the amount of fine particulate matter in the air could be up to four times higher than the average, more than enough to cause respiratory distress.

For years, Kirpal Singh Musapur grew sugarcane on 60 per cent of his 60-acre farmland in Jalandhars Musapur village. That figure is now down to 16 per cent.
I used to grow sugarcane on 38 acres till 2009-2010, which has come down to 10 acres now. Now my area under paddy has increased from 10 acres to 38 acres in all these years, he said.Musapur, who completed his Civil Engineering, started farming in 1995-96 and started growing sugarcane in 1998.

When we take our crop to mill, we are supposed to be paid by the mills in 14 days times as per the law, but our full payments are made after a year or even after two years, said Kirpal Singh.
