How To Make It

In a medium bowl, or any heat-resistant recipient, add brown sugar. Pour hot water over sugar, stirring until it has dissolved.

Add vanilla extract and give it a stir to mix.

Wait for it to cool for 10 minutes and store in a jar with a lid, inside the fridge. Brown sugar syrup is good up to 2 months if stored correctly.

Storing Brown Sugar Milk Tea

As I mentioned, this brown sugar milk tea recipe will make 2 servings.

So if you want to enjoy the boba tea throughout the day – or have it the next day – you can make a double batch and store the rest for later.

To store, first combine the tea and the milk in a large covered jug. Then, combine the syrup and boba pearls in an airtight container.

You can store both components in the fridge for up to 2 days. After that point, the boba will still start to harden and won’t be as soft and chewy anymore.

Brown sugar syrup is a dark, rich liquid sweetener perfect for almost any kind of bubble tea recipe. If youre a tea lover, youre probably already familiar with simple syrup, and how well it mixes into any drink recipe, hot or cold.

But have you ever had a recipe that calls for brown sugar syrup? This darker, richer syrup is basically the same thing as simple syrup, but instead of white cane sugar, its made with its sweet cousin, brown sugar.

The great thing about both simple syrup and brown sugar syrup is that theyre incredibly easy to make to keep on hand in your refrigerator, just waiting for the perfect tea drink recipe to come along.

What Do I Need To Make Brown Sugar Boba

This bubble tea recipe is incredibly easy to follow along, and only requires 3 simple ingredients from your pantry and a glass of milk to put together. Here are the ingredients you will need:

  • Tapioca pearls: this recipe calls for pre-made tapioca pearls which can be found online or in the tea section of Asian grocery stores.
  • Please keep in mind that the cooking time will vary for each, but they will just need to be softened in boiling water for a few minutes to restore their soft & chewy texture.
  • Brown sugar: I recommend using dark brown sugar to create a richer caramel flavor in the syrup.
  • If you have any dark muscovado sugar at hand, it makes for a wonderful substitute to create an even bolder flavor.
  • Black tea: of any kind. I used orange pekoe tea for mine, but please free to use any kind of loose leaf tea or tea bags to brew your tea before mixing it in with the brown sugar.
  • For a non-caffeinated version, you can use water instead to boil down the syrup.
  • Milk: both dairy or non-dairy milk will work well for this recipe, but 2% milk or oat milk will produce the creamiest results.

    Traditionally, tiger milk tea is just cold milk and brown sugar syrup, served over tapioca pearls. Unlike most other milk teas, brown sugar milk tea actually doesnt contain any tea at all! But, for this boba milk tea recipe, I decided to make a true milk tea by boiling milk and steeping black tea. This is totally optional, but I think its deliciously comforting!

    How To Make Brown Sugar Boba Tea

    • First, make brown sugar syrup for boba. Simmer water and brown sugar for about 5 minutes, then allow to cool to room temperature before using.
    • If desired, prepare brown sugar milk tea with black tea of choice. Steep tea bag in hot milk for 10-15 minutes, then chill before serving. Or, skip this step and just use plain, cold milk instead.
    • Then, cook boba pearls according to package directions.
    • Finally, assemble brown sugar bubble tea in a boba cup. Add cooked tapioca pearls into cup, then drizzle brown sugar syrup to create the tiger stripe look. Pour milk tea over boba, serve with a boba straw, and enjoy!

    Can You Make This Drink Without The Tapioca Pearls

    If you prefer the drink without the pearls, you can just make the syrup on its own to add to your glass of milk.

    Feel free to also adjust the serving size to cater to your needs. If you are skipping the tapioca pearls, I would recommend reducing the serving size in the recipe card below to make a smaller portion.

    The consistency of the syrup is also easily customizable by adjusting the cook time, but please do keep in mind that the syrup will slightly thicken as it cools!

    In a small saucepan, half cups each of brown sugar and water. Heat over low heat until brown sugar dissolves. Heat over medium heat for approximately one to two minutes, heat over medium heat, stirring until fully dissolved. Make sure you do not simmer the mixture!

    The mixture should now be ready! You wont have to wait long for it to come together. The nuance of the flavours will surprise you once you place your spoon in for a taste.

    Brown Sugar Boba Matcha Latte

    Not all Brown Sugar Boba will have tea in it. Sometimes it is just brown sugar syrup, tapioca pearls and milk. This will depend on your customers and you can offer both options.

    If you are going to serve real milk tea, then first you will need to brew your black tea. We recommend using Ceylon Black Tea when mixing your tea with fresh milk.

    Ceylon Black Tea:*10 grams of tea to 1 liter of water*Ideal temperature is 200* F or 95* C*Brewing Time 8 Minutes

    You can either brew your tea on the stove or use a Tea Brewer.

    Once your tea has finished brewing, let it cool down to room temperature and then put it into the refrigerator overnight.

    Now mix your tea in a 50/50 ratio with fresh milk.

    How To Get Brown Sugar Ripples

    The most iconic thing about Brown Sugar Boba is the way that the brown sugar sticks to the cup. When you add plain milk to your cup it really makes the brown sugar stand out.

    Use a ladle with holes in it and scoop up some tapioca pearls. Now spin your cup around your ladle and let the tapioca pearls drop into the cup. With a little practice, youll be able to get your cup covered in brown sugar just like the pros!

    To Make The Homemade Boba

    STEP 1: Bring water to a boil over medium heat.

    STEP 2: Add the tapioca pearls and cook covered for 3 minutes. Then turn off the heat and cook them in the hot water for another 3 minutes. .

    STEP 3: Strain the cooked tapioca balls. Add the cooked boba to the brown sugar syrup. Stir them around to coatand you have your brown sugar boba pearls!

    TIP: to bring the boba to room temperature faster , place the heatproof glass in cold water or an ice bath for 2-3 minutes. Be sure to use a heatproof container, or metal bowl, since glass could crack.
