What Makes These Cookies Chewy

Chocolate Chip Cookies WITHOUT Brown Sugar

A important ingredient to chewy chocolate chip cookies is using melted butter. Melted butter keeps cookies softer during the baking process, therefore yielding a chewier cookie.

I added an extra egg yolk to this recipe which adds more fat and richness to the cookies, which helps offset some of that crispness you get from only using white sugar and gives it that more classic, chewy texture.

I also reduced the bake time for these cookies, baking them until only the edges were a slight golden brown. This had the most impact and helped retain moisture and chewiness.

In one of my last test batches, I ended up adding 1 tablespoon of maple syrup to see if that had any effect as well. I found that it helped add a little more bend and chew to the cookies, but I was also very happy with the results not using it.

That’s why the final recipe lists it as optional.

If you have pure maple syrup on hand, I recommend adding it but you’ll still get great cookies without it!

Alternatives To Brown Sugar For People With Dietary Restrictions

If you have food allergies or dietary restrictions, there are still plenty of options for making chocolate chip cookies without brown sugar. Whisk Together The Wet Ingredients

First, melt the butter. I melt the butter in the mixing bowl Ill be using again fewer dishes!

Use the microwave to melt the butter in short increments to prevent splattering and ensure it doesnt get too hot. You dont want the butter to be so hot it cooks the egg when its added .

Next, whisk in the granulated sugar for about one minute.

Whisk until the mixture is light and pale in color. This helps add air to the mixture and ensures the butter and sugar are fully combined, so the cookies will lift while baking, instead of being flat and dense.

This process also helps cool off the melted butter, so again, we dont cook that egg. If the mixture still seems hot, wait a minute or two before moving on.

Now, whisk in the egg and vanilla extract until theyre fully combined.

In this recipe, the white sugar is creamed with butter to make a light and fluffy base for thicker cookies with a soft texture to overcome the lack of acidity in the white sugar.

Granulated sugar also offers a sweet, yet neutral, base for the other flavors in your cookies. This allows your high-quality vanilla extract or to-die-for dark chocolate chunks to really stand out.

To answer the question: no, brown sugar is not necessary for soft chocolate chip cookies. White sugar has many redeeming qualities that might actually be preferential – depending on your cookie goals!

If youve run out of brown sugar but have molasses, you can easily make your own brown sugar.

Simply mix 1 cup / 240 g / 8 oz white sugar with 1 tablespoon molasses for light brown sugar. For dark brown sugar, combine 1 cup / 240 g / 8 oz white sugar with 2 tablespoons molasses.

How To Brown Butter For Cookies

Junior Mints Chocolate Chip Cookies without Brown Sugar

Over medium heat, let the butter melt down. Avoid using a dark pan as you will struggle to see the caramelization of the butter and run the risk of burning it.

Once you have melted butter, let it cook further for around 3-4 minutes, stirring occasionally until the milk solids in the butter have caramelized into a golden amber color and the butter smells nutty.

The butter will be bubbly during the process, then all of a sudden it will go foamy. Keep stirring as it does this and take it off the heat to check the browning. Usually, this is a good indication that the browning process is finished. The first time you melt butter will be the trickiest as you learn to gauge the caramelization, but once you’ll see how delicious it is and you won’t look back!

Pour the hot butter into a large bowl, including all the caramelized solids at the bottom of the pan, and allow it to cool down for 10 minutes before continuing with the recipe.

  • What Does Brown Sugar Do

Brown sugar has a more dense consistency and compacts more during the creaming process than white sugar which usually results in cookies with less rise and more spread. The extra moisture in brown sugar from the added molasses helps keep the cookies from drying out and adds to their chewy texture. Molasses added to the brown sugar also interacts with baking soda to help improve leavening action.

Oftentimes, the caramel flavor that brown sugar adds is the perfect complement to the deep buttery taste of cookie dough.
