I love this French toast with fresh raspberries and blueberries so I make sure to have those on hand when I make these.
In a shallow baking dish, crack in four eggs and pour in a cup of heavy cream or whole milk. Add in 3/4 teaspoon of pure vanilla extract, a pinch of salt and whisk, whisk, whisk until the egg whites are sufficiently beaten to death.
Take the thick, slices of brioche and quickly dunk each slice into the egg mixture. Drain off any excess egg mixture and arrange the slices on a wire rack thats set into a rimmed baking sheet.
Then generously sprinkle spoonfuls of the cinnamon sugar over top of the slices. Make sure you get it as close to the edge as possible. You know I live for those crispy edges!
Preheat you griddle to 375° and grease the griddle with coconut oil. Lay the bread sugar-side-down on to the griddle. Sprinkle the now exposed toast with more cinnamon and sugar nd flip once a delicious, cinnamon-y, sugar-y crust forms on the bottom. Continue to cook until golden brown. Then transfer the cinnamon sugar crusted French toast to a clean rimmed sheet pan and keep warm in a 250° oven.
You may need to adjust the temperature on your griddle to avoid burning the sugar before the middle cooks.
Im SO obsessed with this cinnamon sugar crusted french toast. And the berries! I dont even think its berry season, but Ive been putting them on everything, from this here cinnamon French toast to my oatmeal. LOVE.

Change Your Frying Method

Here are different frying methods to end up with crispy French toast.
Shallow Frying
This is the most common way to make French toast. You put two tablespoons of clarified butter in a nonstick pan over medium-high heat, swirl them around, and then place your soaked and crumb-coated toast in.
Its a fairly straightforward method because you can peek at the bread for doneness. Just gently flip the toast to the other side using a spatula when the first side is browned.
If you feel like the bread is browning too fast, lower the heat a little.
After youre done with a batch, wipe the pan from the excess butter and crumbs and apply some more butter to the pan. This is crucial if you want your last piece to taste as good as the first.
Frying then Baking
Any fan of big old Texas toast will want to make crispy French toast out of it. If thats the case, your best bet is to double-cook it.
Shallow frying will yield a crispy, golden exterior, but the insides might not cook as fast.
So to make sure youre not eating any raw eggs, fry the toast in clarified butter as usual, and then place the done pieces on a rack and put them in a 300 degree-oven for about 10 minutes to finish cooking.
This is also a great way of making French toast for a crowd if youre hosting brunch this Sunday!
Deep Frying
If you want to take a page out of the book of fast food restaurants, you can deep fry your French toast to ensure even cooking, crispiness, and a golden color you cant resist.

Best French Toast Toppings
One of the best things about French Toast is that you can put anything you like on top of it! You can really customize this breakfast staple with any of your favorite toppings, to cater to your taste buds.
We love traditional French Toast served up with a little syrup and a dusting of powdered sugar and a little cinnamon, and it smells truly delicious!
However, there are a number of different French Toast toppings that you can try, such as:
- Whipped cream
The French Toast Ingredients
- Bread: I use brioche. Read the above list of the best bread for french toast!
- Eggs: I used two large eggs . Read the notes for a way to make it even more custardy with an extra yolk.
- Milk: I like to use whole milk for the best results. For a dairy-free option, feel free to use your dairy-free milk of choice. I recommend coconut milk for the creamiest results.
- Spices: cinnamon, nutmeg, vanilla , and lemon extract, or some lemon/orange zest .
- Sugar: just a little is needed to flavor this sweet treat. Feel free to use regular sugar, coconut sugar, light brown sugar, cinnamon sugar, etc. You may also be able to use a sweetener like Swerve/erythritol though Ive never tried.
- Butter: you can use butter or ghee for frying the brioche french toast. Alternatively, you could use a little coconut oil, though I like the added flavor of butter.
- Toppings: my favorite way to top french toast is with lots of fresh berries, some powdered sugar , and maple syrup .

French Toast Serving Size
We will be working on the assumption that you will be serving a side of something with your french toast lets say bacon.
The serving size for french toast is 2.5 full slices of thick bread or 5 half slice triangles stacked with a side like bacon in the middle.
Of course, you will also have a bit of maple syrup, cinnamon powdered sugar, perhaps a pat of butter or whipped cream.
How To Freeze French Toast
Freezing French toast is easy and great for breakfast meal prep. Arrange cooked and cooled French toast on a baking sheet, freeze for 1 hour, then transfer to freezer bags and seal.
Store French toast in the freezer up to 2-3 months. Reheat the French toast in the toaster, on a skillet, or in the microwave until heated through completely.
Don’t Miss: Does Milk Have Sugar In It
Is Powdered Sugar Vegan
Standard powdered sugar is not vegan. The process for making powdered sugar involves using white sugar, and that isnt considered to be vegan.
You can buy vegan powdered sugar, though. Its sort of pricey when compared to standard powdered sugar.
If you want your French toast to be close to standard French toast, you likely want to use powdered sugar as a topping. Or you might wish to dip the French toast in powdered sugar and syrup.
Buy vegan powdered sugar if youre concerned about sticking to a vegan diet. You should be able to find this type of sugar online or at local organic food stores.
Why Is Stale Bread Best For French Toast
Beyond getting the soaked bread into the frying pan right away, using dry, stale bread is key to avoiding soggy French toast. Fresh bread already has a good deal of moisture, but the drier a bread is, the more room it has to soak up the egg custard. If you only have fresh bread thatâs still soft, dry it out before soaking it in the batter. You donât want to toast it, though. Instead, lay slices on a baking sheet and place it in the oven at 275 F for just about 10 minutes, or until the center is dry.

How To Make French Toast Crispy
French toast in its purest form is made of stale or dried bread dipped in an egg and dairy custard, then fried in butter. This yields a browned exterior and a pudding-like interior.
However, the crust on the outside seldom gets crispy. Thats simply because you cant subject the bread to high-enough heat to brown and dry out the surface while cooking the insides all the way through.
So what happens, if you attempt to fry it at high heat, is that the bread will brown too fast while the inside remains raw. With eggs in the mix, you wouldnt want that.
Alternatively, you can create a crust with an already crispy material to compensate for the wetness of the bread dipped in the custard. Think of your French toast as chicken schnitzel or Japanese katsu, but richer and with more syrup.
How To Store And Reheat

Fridge: to store your French toast slices, let them come to a complete cool and then cover with foil or plastic wrap. Store the slices in an air-tight storage container.
Freezer: if you want to freeze the slices, let them come to a complete cool and then stack the slices with a piece of wax or parchment between each piece. Wrap the French toast in plastic wrap and then transfer to a freezer safe storage container.
Reheat: My favorite way to reheat the French toast in a 350 degree oven for a few minutes until warmed through. If you need a faster option, you can also microwave the French toast for 10-15 seconds at a time until warmed through.

French Toast Fails And How To Fix Them
- Soggy French Toast: The bread was soaked too long. Skillet French toast should crisp up and cook fast. Soaking the bread for too long will make the bread soft, even when cooked through. Soak the bread for 2-3 seconds max on each side. Coat only as many slices as you will be cooking at one time to prevent soggy French toast. Using stale or dry bread is the best prevention. Fresh bread has more moisture that can add to the soggy texture.
- Outside is Cooked, but the Inside is Still Liquidy: If the outside is cooking faster than the middle, then the heat is on too high. Start over. Clean the skillet/pan. Warm it to medium heat, instead of medium-high, before adding more French toast.
- Dry French Toast: Either there wasnt enough custard mixture in the bread, or it was cooked too long. The milk mixture should soak almost completely through the bread, without it being saturated. Cook the French toast just until the custard is set. About 2-3 minutes each side.
- Egg Showing on Bread: The batter wasnt whisked well enough. Any leftover clumps of egg will cook on on the outside of the bread. Whisk the batter completely to help prevent this. The salt in the batter should also help break down the eggs to fully incorporate them. Whisk until the mixture is one consistent texture. Be sure to let the batter drip off of the bread before cooking the French toast.

Use whole grain bread: instead of using a white bread such as brioche, feel free to use any kind of whole grain bread. One tip in this realm is that the thicker the bread the better, but thin will work too.
Skip the cinnamon sugar topping: instead of using cinnamon sugar, use just cinnamon. This will help reduce the grams of sugar.
Use less butter: instead of butter, you can use cooking spray. This will help reduce both fat and calories.

Can You Make Vegan French Toast
If your goal is to make vegan french toast, youre going to need to substitute more than just butter. Most French toast recipes call for dairy products, but you can find suitable replacements.
There are many options, but its common for people to replace milk with dairy-free milk. For instance, you could use almond milk or soy milk to make French toast.
Its easy to make tasty French toast without using dairy ingredients. Find your favorite type of non-dairy milk and use that.
Then youll just need ingredients such as thick slices of bread , corn starch, vanilla extract, and cinnamon.
You might wish to use optional ingredients such as strawberries to add a little something to the meal. Of course, youll be using a powdered sugar substitute and maple syrup when you serve the French toast.
