Im super excited to share this recipe with you guys today! Ive been working on this post for a while now. The recipe is adapted from my sister-in-law Sandi. I wrote it down in pencil in a notebook years ago and have been tweaking it ever since. They are good sugar cookies, for sure, but I was on the hunt for a secret ingredient that would make them next-level.

How Long To Bake Sugar Cookies

Mine baked just enough at 7 minutes, but keep an eye on them to see how they do in your oven. I removed mine when they had spread nicely, looked just done enough without looking undercooked, and the edges werent quite golden. Dont worry if the centers of the cookies are still quite soft, they will firm up as they cool.

Youre looking for a nice light golden brown around the edges, and some crackling along the top. Be careful not to over bake, or you will lose the soft and chewy factor.

The Trick Is The Order Of Steps

Notice how I roll out the dough BEFORE chilling it in the refrigerator? Thats my trick and you can see me doing it in the video tutorial above.

Let me explain why I do this. Just like when youre making chocolate chip cookies, to prevent the cookies from over-spreading, the cookie dough must chill in the refrigerator. Roll out the dough right after you prepare it, then chill the rolled-out dough. Dont chill the cookie dough and then try to roll it out because it will be too cold and difficult to work with. I divide the dough in half before rolling it out and highly recommend you do the same. Smaller sections of dough are simply more manageable.

Another trick! Roll out the cookie dough directly on a silicone baking mat or parchment paper so you can easily transfer it to the refrigerator. Pick it up, put it on a baking sheet, and place it in the refrigerator. If you dont have enough room for two baking sheets in your refrigerator, stack the pieces of rolled out dough on top of each other.

How Can I Tell When The Cookies Are Done

You know how most cookie recipes say to cook until the edges are golden? Just say no! No, I tell you! Theyll be hard and crunchy instead of soft, tender, and chewy. You do not want the edges or tops to brown at all. The cookies should be barely browned on the bottom. When the cookies are baking, they will have a shiny surface on top. When they are fully baked, they will appear completely matte across the top, but not at all brown. Watch carefully! Over baking is a death sentence for soft cookies.

Sugar cookie frosting is super easy to make. Its very similar to a buttercream but not as much whipping is required and the ratios are a little different. To prepare it:

    Simple Sugar Cookies (From Scratch) FOOL

    Preheat oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper or a nonstick baking mat, such as a silicone mat.

    Cream together room temperature butter and sugar with a stand mixer or hand mixer in a large bowl, until light and fluffy . Then add egg and mix until well combined. Scrape down sides of mixing bowl to be sure butter and sugar are well combined. But be sure to not over-beat the butter and sugar when creaming it together. Doing so could cause the cookies to rise and fall flat when baking.

    Stir in flour, baking powder and salt and combine these dry ingredients into the mixture. Then gently stir in vanilla extract into the cookie dough.

    Scoop cookie dough with a tablespoon and roll into a ball. Be sure to not over handle the balls of dough as will make butter too warm. If the dough seems too warm or sticky, chill in the refrigerator for about 30 minutes, then proceed with scooping and rolling into balls.

    Add sugar to a large separate bowl for rolling. Lightly roll cookie dough balls in the granulated sugar to coat them. This adds a sparkly touch that lends a crisp little coating on the cookie once it is baked. While you can certainly skip this little step, I highly recommend that you not. It is so worth it!

    Place each rolled cookie dough ball onto a parchment lined or silicone mat lined cookie sheet, about 1 ½ to 2 inches apart. Make sure to provide ample spacing between each cookie for best results.

    Freezing sugar cookie dough. This sugar cookie dough recipe freezes beautifully. I love having cookie dough already mixed up, so I can bake a special treat whenever the craving hits or we host an impromptu get together.

    Scoop out balls of cookie dough. Place the cookie dough in a freezer-safe baggie and freeze the cookie dough for up to 3 months.

    Bake from frozen. Baking from frozen will work just fine. The tops of your cookies may darken a bit more, but they will still be fabulous. Follow all of the cooking instructions but add a minute or two onto the bake time.

    Freezing baked cookies. These already-baked soft sugar cookies freeze very well. Store in a freezer-safe container or baggie and freeze the cookies for up to 3 months.

    Storing baked cookies. Baked cookies will keep in an airtight container or zip-top baggie at room temperature for about 1 week, but I cant imagine them lasting that long!

    You wont be able to eat just one of these amazing soft sugar cookies, I promise you that. I apologize in advance, if your pants fit a little tighter!
