This is THE sugar cookie recipe that we will use forever and ever. It is absolutely fool proof for a perfectly soft sugar cookie every single time. This recipe allowed us to stop bending to kid pressure, buying pre-packaged pink frosting sugar cookies at the grocery store every week. While we like our kids snacking on fresh fruit and raw veggies, we are happy to indulge them from time to time, and we can feel good about making these from scratch and knowing exactly what goes into their cookies.
Can You Freeze No Bake Cookies
Yep! For best results, flash freeze first by placing the cookies on a baking sheet, not touching, and chill in the freezer for about two hours. Once frozen, transfer cookies to a freezer-safe sealed container or resealable plastic bag. Cookies can be frozen for about two months before quality is diminished.
If youre not freezing them, they can be stored at room temperature in an airtight container for about a week.
These cookies sort of remind me of a cross between a Reeses Peanut Butter Cup and a Whatchamacallit , but peanut products are a big no-no in our house, so Ive been making them with almond butter since my kids were little.

- 1COOKIE DOUGH DIRECTIONS: In a large bowl combine sour cream, sugar, butter, eggs and vanilla mix well. With a cookie scoop, scoop out even size scoops of dough and then roll in a ball in your hand and place on a cookie sheet and slightly flatten with your hand so it’s in a circular shape. Bake in a pre-heated 350 degree oven until light golden brown, no more than 10 minutes. They may seem under done but they aren’t. Transfer to a cooling rack and let cool completely before frosting.

Continue to mix on medium until smooth.

Cookie dough is placed between 2 rolling guides and rolling pin is then rolled on top of the rolling guides. Rolling pin pushes the dough down but only as far as the rolling guides let it. Ensuring even thickness of the rolled cookie dough.
HOW THICK DO YOU MAKE YOUR COOKIES FOR DECORATING?
I roll my cookies ¼ inch thick and a little thicker when making cookie pops, to make the room for a lollipop stick.
MY COOKIE DOUGH IS HARD AS A ROCK, WHAT TO DO NOW?
After cookie dough is chilled it often becomes firm.
- There is no need to panic.
- Cut the cookie dough disk into quarters.
- Microwave one ¼ of cookie dough on high for 5-7 seconds. It should be sufficient to soften the dough so you can roll it out. However, you dont want it to be super soft.
- Cut up remaining quarters into smaller bits.
Place softened/microwaved 1/4 of the cookie dough onto the work surface, between 2 rolling guides. Place rolling pin on top of the rolling guides roll out the cookie dough. You can watch the video to see exactly how you can do rolling out part easily.
Cut out cookies with a cookie cutter and transfer them onto a baking sheet lined with a parchment paper.
CAN I RE-ROLL THE SCRAPS ?
Gather scraps and add one piece of fresh dough you set aside, re-roll and repeat.

- The cookie dough can be made ahead and refrigerated or frozen. If going this route I recommend reducing the flour to 2 1/4 cups .
- Just thaw frozen cookies in the fridge before baking.
- Store baked cookies in an airtight container.
- Baked cookies can be stored at room temperature, the fridge or the freezer.
- Theyll last at room temperature about 3 days, in the fridge for about 1 week and the freezer up to 3 months.
Troubleshooting Best Sugar Cookie Recipe
Scooping and dumping your flour may be the problem! Even with level scooping measurements can vary. Try getting a digital kitchen scale and adding your ingredients by weight.
If your cookies seem to consistently need a longer or shorter baking time consider calibrating your oven with an oven thermometer.
Bake with a silicone mat or parchment paper.
Invest in a small metal cookie spatula to transfer cookies.
If left on the counter top for about an hour your butter should be the right consistency- a finger pressed onto the butter will make a slight indent but not sink down into it.
Whenever a recipe calls for room temperature butter you should use room temperature eggs. To take the chill off of eggs I place them in a shallow bowl of warm water for 2-3 minutes. You can then crack them for use in your recipe.

- Divide the cookie dough into 1 1/2 inch balls of dough and roll them in a little bit of granulated white sugar. Place the balls onto a cookie sheet and bake them!
The Trick Is The Order Of Steps
Notice how I roll out the dough BEFORE chilling it in the refrigerator? Thats my trick and you can see me doing it in the video tutorial above.
Let me explain why I do this. To prevent the cookies from over-spreading, the cookie dough must chill in the refrigerator. Roll out the dough right after you prepare it, then chill the rolled-out dough. Dont chill the cookie dough and then try to roll it out because it will be too cold and difficult to work with. I divide the dough in half before rolling it out and highly recommend you do the same. Smaller sections of dough are simply more manageable.
Another trick! Roll out the cookie dough directly on a silicone baking mat or parchment paper so you can easily transfer it to the refrigerator. Pick it up, put it on a baking sheet, and place it in the refrigerator. If you dont have enough room for two baking sheets in your refrigerator, stack the pieces of rolled out dough on top of each other.

Its a softer buttery cookie that cuts out perfectly and holds it shape when baked.
Plus it has a fantastic royal icing that sets up beautifully and is perfect for decorating for any occasion.
Tips For Baking The Best Cookies
Before I leave you to run to the store to get everything ready to make these cookies in time for dessert tonight , let me share a few tips for baking the best cookies:
1. Always use the scoop-and-sweep method when measuring your dry ingredients! We want the ingredient amounts to be as accurate as possible here so the end result is the cookie of our wildest dreams.
2. Use a cookie scoop to help shape the cookies and to scoop out the correct amount. I love to use this cookie scoop when making these cookies.
3. Dont overbake the cookies! We bake these cookies until theyre just barely baked through, even a little underbaked in the centers, so that as they cool they finish baking but retain that glorious chew. This is also why we let the cookies cool directly on the baking sheet for a few minutes the residual heat from the baking sheet continues to lightly bake the cookies, but theyll also firm up a bit more so you can transfer them more easily to a cooling rack.

“In the bakeshop, we use a #20 scoop to make our cookies,” says Bartone. “This is a pretty large scoop a tad larger than most but it makes cookies that are more substantial and indulgent.” This keeps the cookies completely consistent and makes sure one isn’t overcooked while the other is still raw.
How To Make Cannabis Butter
Cannabis butter is typically made using one of three different methods:
All of the methods involve heating the melted butter with the decarbed cannabis, before straining it.
To make cannabutter, youll need the following ingredients:
If using a crockpot, fill it about halfway with water, and let it heat to 160-190°F . Put the butter in mason jars, add the decarbed cannabis to the jars and cover. Place the jars in the water in the crock pot and seal th epot and cook for at least two hours. Remove the jars and let the mix cool before stringing it through a cheesecloth into a container.
In a saucepan, simmer a cup of water and a cup of butter until the butter melts and then add the cannabis and stir well. Simmer for 2-3 hours at around 160-180°F . Do not let the mixture come to a boil and after 2-3 hours, remove it from the heat and then strain it after it has cooled.
In a slow cooker, simply set the temperature to 160-180°F , add in the butter and cannabis, stir and cover. Let the mix simmer for about three hours, stirring from time to time. Remove from heat, let it cool, and strain into the container of your choice.
