Sugar Free Chocolate Syrup

When it comes to keto baking staples, my favorite recipes to make are condensed milk, maple syrup, and this sugar free chocolate syrup.

Growing up, one of my favorite desserts was ice cream sundaes. There was something special about the combination of ice cream, chocolate syrup, and sometimes some crushed nuts. Granted, it wasnt really the ice cream itself that stood out, but the rich and smooth chocolate sauce poured all over it.

In my household, my mom would make her own chocolate syrup. We never had any of the bottled stuff and because of that, it tasted so much better. As it wasnt the healthiest of treats, it wasnt something we enjoyed regularly but when we did, it would essentially be a chocolate syrup with a side of ice cream.

What Else Is Needed

  • Double boiler using a double boiler method is the best way to melt the cacao butter.
  • Chocolate mold use a flexible silicone mold for this process unless you plan on tempering the chocolate, first. Otherwise, it wont release from the mold. I use a silicone chocolate bar mold. Tip: You can also buy chocolate molds to make chocolate chips!
  • Silicone spatula I prefer to use a silicone spatula as it isnt porous and thus theres no risk of it containing water and causing the dark chocolate to seize.

HOW TO MAKE CHOCOLATE (Sugar Free) – Nicko’s Kitchen

Important! This recipe works best with powdered sweetener. Granular sweetener is too heavy and will sink to the bottom, resulting in crunchy chocolate chips. You can blend granulated sweetener in a food processor to make powdered sweetener.

The best zero carb sweetener for this recipe is allulose. It melts like sugar and you won’t have any issues with grittiness. Allulose is easy to get hold of in the US. It’s not yet common in the UK and Europe, but you can get it via the website mydiet-shop.co.uk.

My go-to sweetener is still erythritol. I tolerate it well and don’t mind the slight cooling taste it has. I like the blends that also contain a small amount of stevia and monk fruit .

The one thing about erythritol is that is has a tendency to re-crystallise when it cools. This means you will have an ever-so-slight graininess in your keto chocolate chips.

This should be less noticeable if you use a sweetener such as xylitol .

How To Make Sugar Free Chocolate Cake

  • Prepare coffee: Make the instant coffee and let cool to room temperature.
  • Preheat oven/prepare tin: Line a 22 cm springform tin with baking paper on the bottom, and grease the sides of the tin with butter. Preheat oven to 175 degrees C or 350 degrees F.
  • Mix Dry Ingredients: In a large mixing bowl, mix together the flour, baking powder, salt and cocoa powder.
  • Whisk Eggs: Use a whisk to beat together the eggs, granulated sweetener and vanilla until fluffy and pale. Hand whisk for about 1 2 minutes o make sure sweetener is dissolved.
  • Add Wet Ingredients to eggs: Melt butter in microwave and to the egg mixture, along with the sour cream and cooled instant coffee. Whisk vigourously until all the lumps are gone and it is smooth, silky and a caramel like colour.
  • Combine Dry and Wet Ingredients: Make a well in the centre of the dry ingredients and pour in wet ingredient mixture. Use a spatula to mix through, making sure to blend in all the flour. Set Aside.
  • Melt Chocolate: Microwave chocolate until its only just melted
  • Pour Chocolate and Milk into Batter: Add the melted chocolate, along with the milk to the cake batter and gently stir through with spatula to create a thick dark batter.
  • Bake: Bake for 30 minutes. To test if cake is cooked, insert a skewer into the centre. If it comes out clean, almost clean with few crumbs, cake is cooked. Let cool on a wire rack before slicing. Store in an air tight container at room temperature for 3 to 4 days.

    The Trick With Keto Chocolate Layer Dessert

    Now, I already fixed the majority of the first problem with layered low carb desserts the waiting! I say majority because I still recommend refrigerating it for an hour or two at the very end before serving. But, unlike other chocolate layer dessert recipes, at least you dont have to wait between layers.

    So, the only slight challenge thats left with a treat like this? Apparently, a creamy six layer dessert can be tricky to remove from the pan. It always falls apart on me! The first piece definitely wont look pretty, so be prepared for that.

    After that one piece, make sure youre cutting all the way through the crust layer and use a thin, sturdy spatula to remove each piece from the pan. I love this silicone cookie spatula, which is the perfect size.

    Just remember, it will still taste delicious even if you mess up on the serving process. And if you love chocolate and whipped cream, it will be one of the best low carb desserts youve ever had.
