The Best Keto Sugar-Free Chocolate Pudding Recipe

Most pudding is sweetened with sugar and thickened with cornstarch. While its easy to switch out the sweetener, the thickener is a bit more challenging.

In the pudding recipes Ive created in the past, Ive used chia seeds to thicken puddings. This works well in my Low-Carb Strawberry Cheesecake Chia Pudding and my Low-Carb Coconut Matcha Chia Pudding Recipe, Ive also used cream cheese as a thickener in my Low-Carb Banana Pudding and avocado in my Chocolate Almond Avocado Pudding Recipe.

For this recipe, I was looking for a thickener to create the same texture as that pudding I grew up with. In fact, I ended up using a combination of three ingredients to thicken itcream, egg yolks, and glucomannan.

Cream and egg yolks add flavor and creaminess to the pudding in addition to thickening it.

Glucomannan is a fiber that adds no flavor, but thickens quite well. It comes form the konjac root. Ive only recently started using it and am grateful that I invested in a bag. I cant wait to use it in more recipes.

Dont let the total carb count scare you away from making this recipe. Most of those carbs come from fiber, which is non-digestible, but helps you feel full and maintain a healthy gut biome. It also helps prevent constipation as well as other health benefits.

I found that glucomannan worked quite well in this recipe, thickening the pudding, without creating a weird texture. In fact, the texture is very similar to the puddings that I grew up with.

A Sugar Free Sticky Toffee Pudding

As often with keto desserts, you’re not getting EXACTLY the same as the original, but a creative substitution that hits the spot just as well. So, here’s how I changed up the recipe to turn it into a keto sticky toffee pudding:

Apart from using almond flour and coconut flour, I also added a touch of cacao. This does not make it a chocolate cake so dont expect a rich chocolate flavour! It’s just enough to make it look like a proper sticky toffee pudding. Plus, its sweetened with a golden erythritol blend to bring home that traditional toffee caramel flavour.

The sauce is sugar free, buttery and creamy and complements the base well. You do need both together as unlike many low carb sticky toffee puddings which can be overly sweet, this is sweet but not sickeningly so. Theres a touch less sweetener in the base than most cakes because you have the sauce, too.

Is It Ok To Eat Sugar Free Jello

Sugar-free jello has only 10 calories per serving that come from the very little protein it contains, so it is a good snack if you are trying to lose weight. But, that being said, too much of anything is never healthy, so be mindful of how much you consume, since it is still a highly processed food.

Can You Eat Chocolate On Keto

I am a total chocoholic, so I dont want to do any diets that deprive me of chocolate!

Fortunately on keto you can incorporate chocolate, so long as it is unsweetened (or sweetened with a keto friendly sweetener.

The keto diet isnt necessarily about getting rid of certain foods, but rather staying within a specific range of daily carbohydrates. Some things can be difficult to fit in, like a regular chocolate candy bar that has dozens of grams of carbs and added sugars.

However, a sugar free chocolate pie could totally work! This recipe has just 6 grams net carbs per serving, so if you budget your daily carbs, it could be a fit!

And of course, a treat is a treat! You wouldnt want to eat chocolate pie after every meal, even if it is low carb. Its all about balance!

Tips And Tricks For Making Chia Pudding

Running into issues with chia pudding recipes? Each recipe is a little different, but we made a list of the most common errors and how to fix them:

  • Chia Didnt Set Older chia seeds can tend to not set well. If this happens to you simply give the chia pudding another stir and wait about 30 minutes.

    Keto Banana Pudding Recipe Instructions

    This recipe makes six servings!

    Here are a few photos to show you exactly how we made this Keto Banana Pudding recipe:

    Start by heating up the cream.

    In a separate bowl, combine the egg yolks with the allulose.

    This is the magic ingredient that makes it taste just like real bananas!!

    Mix all the ingredients until its fully combined like so.

    Slowly poor in the heated cream to temper the eggs. You dont want to pour it all in at the same time or else it will cook the eggs. You want to very slowly incorporate the cream with the eggs so that eggs will reach the same temperature as the cream without cooking them.

    Mix it until its all combined together and frothy just like this.

    You want to place a sheet of plastic wrap over the cream mixture once its slightly cooled down. This will prevent a thick crust from forming on top of the pudding once its completely cooled. It will thicken in the refrigerator too. Dont worry about the consistency right now because it will change.

    How To Prevent Pudding Skin

    The only downfall of homemade chocolate pudding is that it can develop a thin layer of skin on top. This happens because when water evaporates, the sweeteners and proteins shrink and get concentrated. The good news is that it tastes fine, but you can easily avoid it altogether.

    Your best bet is to keep plastic wrap tightly covering the pudding at all times unless you are serving it. Make sure the plastic wrap directly touches the surface of the sugar-free chocolate pudding.

    How To Make Keto Banana Pudding

    To start, in a small pot add heavy cream and unsweetened almond milk. You could easily swap the almond milk out for water. The main flavor is coming from the heavy cream.

    Next, crack your eggs and separate the yolks from the whites. If you want to make the topping place the whites in a bowl to mix later.

    Have your sweetener and mix your xanthan gum into that. That will stop it from clumping together and causing lumps.

    Then, heat up your pot. When it starts to steam a little remove it and add a little into the egg yolks. This will bring the eggs up to temperature. If you just drop them in they will scramble.

    Place back on stove on a low heat. Now, slowly pour the egg into the pot while whisking. Continue whisking as it slowly cooks and begins to thicken.

    Then, after it has thickened remove from heat and pour in sweetener and xanthan gum mix. Add in butter, banana extract and vanilla extract. Stir everything in evenly.

    Now, serve or pour into a bowl and refrigerate for about 2 hours for to thicken. In the recipe below are the directions for the whipped egg whites and how to add them in.

    This is such a loaded question, but Ill answer it the way I tend to answer most of these keto questions lately: yes and no. For some, yes. For some, no.

    It really depends. Most people will say yes, jello is keto friendly.

    If youve had sugar free jello, take a deep breath. Youre totally fine. You wont explode.

    Whether or not you choose to eat sugar free jello or gelatin on the keto diet is up to you. For many, it really all depends on your goals and purpose for doing the keto diet.

    Other Diets This Recipe Is Good For

    • Gluten-Free: Not all store-bought puddings are gluten-free, so you have to be extra careful. But with this homemade low carb pudding, its 100% gluten-free.
    • Egg-Free: A lot of homemade puddings have egg yolks in them, but our sugar-free chocolate pudding does not. Its a great egg-free recipe.
    • Nut-Free: This recipe contains almond milk, so its NOT nut-free. But you can replace the almond milk with unsweetened full-fat coconut milk.

    Low Carb Chocolate Pudding

    This sugar-free pudding has more of a dark chocolate flavor, but my husband , absolutely loved it!

    I know people will ask about the coconut milk, but it does not have a strong coconut flavor. The fat in the coconut milk is what gives it such a creamy, decadent mouthfeel.

    So make sure you use a full-fat coconut milk for this pudding recipe.

    How To Store Your Keto Chocolate Mousse Pie

    Keep the pie covered and in the fridge. As mentioned above, I recommend waiting to make the whipped cream until youre ready to serve. Keep any extra whipped cream in a sealed, airtight container in the fridge.

    The pie should stay good for 2-3 days in the fridge. Unless you eat it first, which I cant blame ya!

    Can I Use Another Sugar Free Sweetener

    If you’re not a fan of the liquid flavored stevias I use in this recipe, you do have some other options. One of our newer favorite low carb sweeteners that doesn’t leave an aftertaste, is Better than Sugar by Sweetleaf. They have a confectioners powdered sweetener and they also have a granulated option. It’s a combination of erythritol and stevia and has plenty of sweetness as sugar would provide.

    Swerve confectioners sweetener is low carb, but doesn’t have as much sweetness and you may need to use a bit more to get this as sweet as you like or do like I did in this recipe and also use liquid stevia. We love liquid Allulose but again it isn’t as sweet as using the Better than Sugar sweetener. Allulose comes in a granulated form as well but for the topping of this keto cloud bread pudding using the liquid form is best.

    How To Serve Keto Chocolate Pudding

    Its so delicious on its own, and thats how I usually serve it, or just with a spoon. But if you would like to be fancy, here are a few yummy choices options for you:

    • Top it with keto whipped cream as I do in the video below, or with chocolate whipped cream.
    • Top it with fresh berries.
    • Scatter dark chocolate shavings or a few dark chocolate chips on top.
    • Heat a teaspoon of peanut butter and drizzle it on top.
    • Melt a square of extra-dark chocolate and drizzle it on top.

    How To Make Keto Chocolate Pudding From Scratch

    Keto BREAD PUDDING/low carb bread pudding /grain free/sugar free

    Its so easy to make homemade keto chocolate pudding, dont ever feel intimidated. Follow these super-simple steps:

    In a medium saucepan add the heavy cream, almond milk, powdered swerve, and cocoa powder.

    Turn the stove on low heat and start whisking. You want to keep whisking so the chocolate doesnt burn.

    As you continue to whisk, the pudding will start to thicken. Add in the xanthan gum slowly and keep on whisking. You dont want the pudding to boil, so make sure that it stays on low heat.

    Once the pudding has started to thicken, take the saucepan off the stove.

    Stir in the vanilla and whisk until its mixed in.

    Transfer to a small bowl.

    Cover the pudding with plastic wrap, pressing the plastic wrap onto the pudding directly. This is key, it will prevent the pudding from getting pudding skin on it.

    Place in the fridge for 2-4 hours. The longer the better, to make sure that low carb pudding really sets.

    Make Banana Pudding Layer:

    • Bloom gelatin. Sprinkle gelatin powder over heavy cream and whisk together, then set aside to thicken.
    • Chill. Let the pudding base cool for a few minutes, then whisk to get rid of any film on top. Once its cooled enough not to melt plastic wrap, place that on top, flush against the surface, to prevent film from forming. Refrigerate to set.
    • Make keto friendly banana pudding custard. Use an electric mixer to beat cream cheese, condensed milk, and sugar-free banana pudding together, until smooth. Fold in 1/2 cup of the whipped cream.

    How Many Calories In Jello And Sugar Free Pudding

    One serving of Jell-O brand sugar-free pudding contains 60 calories. Each serving of sugar-free pudding has only 1.5 g of total fat and 270 mg of sodium this allows you to eat pudding as part of your low-fat diet program.
