Its been hot melt-on-the-sidewalk hot. I wanted something frosty and childhood-cherry-flavored. of course, I could have bought a box of sugar-free frozen treats at the store, but then Id have eat them.

One of the greatest problems with sugar-free Popsicles is that often they have the texture of a flavored ice cube. Because of the gelatin in these they are a bit softer and like the original name implies, nearly drip free.

I love this recipe because it just works. It has just three ingredients.

For my first batch I chose to use cherry sugar-free Jello and a packet of Cherry Limeade Kool-Aid. It made 5 popsicles in molds I was using, which holds about 1/3 of a cup. This means that they were about 8 calories each with no carbs. Cool huh?

Yesterday I sent the grand-kids outside with their Popsicles and joined them with one of my own. They kept asking why they couldnt have one like mine despite the fact that theirs were a lot larger than mine. It must have been the vibrant red color.

Guar Gum. Guar gum is a polysaccharide made from the seeds of the guar plant. It is a soluble fiber that our bodies can not digest. However, gut bacteria can ferment guar gum.

Special equipment: six 3- to 4-ounce frozen pop molds Put six 3-to 4-ounce ice pop molds in the freezer for 30 minutes. Combine the strawberries and 1 tablespoon each coconut cream and honey in a blender. Puree until smooth. Pour into a liquid measuring cup and set aside. Rinse out the blender. Homemade popsicles are my favorite in the summer because there are so many fresh fruits available. First, you need to buy a nontoxic popsicle maker.

Next, you need to choose your fruit and puree in a blender .

I use 2 cups of fresh or frozen organic berries. You can use raspberries, strawberries, or blueberries, or a blend of them. A banana will lend natural sweetness. I also add some freshly squeezed fruit juice orange makes the popsicles sweet, but lemon or lime can be fun, too.

I then add one additional cup of water. Other add-ins can include plain yogurt or kefir, or some greens . If you want to add a little raw honey or maple syrup, you can, but if youre using ripe fruit it should be sweet enough, especially if you include banana.

Once you have your blend, just pour and freeze .

  • Fruit I chose to use strawberries for this recipe, but you can use blackberries, blueberries, or raspberries. Whichever fruit you choose to use, freeze it first. It helps give you the right consistency.

How Do You Store Popsicles

Once you have your popsicles dipped in a chocolate magic shell, you will see the chocolate hardening immediately.

To give them a bit of shelf life while serving, it is great to place them on crushed ice, which would prevent them from melting.

To store, I would suggest wrapping each popsicle individually, either with a cling film or plastic wrap, and placing them all into a ziplock bag.
