To my surprise, I REALLY liked this yogurt. Im surprised because I usually dont enjoy most keto products but this was excellent. The texture is smooth and silky with a distinct berry flavor. Its not too sweet and I really enjoyed eating it.

Youll find this product with the other yogurts in the yogurt aisle, but its actually advertised as a dairy snack. Im not exactly sure why as its a milk-based product.

Its surprisingly high in protein for a keto snack but it only has 2 grams net carbs and 1 gram of sugar in a serving.

Because its a keto snack, its high in fat and therefore also fairly high in calories compared to other low-carb yogurts. So if youre looking to limit your calories, be careful with this one because its hard to only eat part of it, its that good.

Most people will probably get away with not even having to take any insulin with this yogurt, but if you do, be mindful that the high-fat content could delay any blood sugar impact.

I really enjoyed eating this yogurt. It has a great creamy consistency and I wasnt in doubt that I was eating a coconut flavored yogurt. Its a fairly sweet yogurt which I enjoyed.

The yogurt is sweetened with fructose and also includes food starch leading to a relatively high sugar content compared to the other yogurts included in this review. After eating it, I did see a mild blood sugar impact, but no spike.

However, given the total net carbs of 9 grams and the 7 grams of sugar, Id think most people managing their diabetes with insulin will need to dose for it.

  • Blend dates with just enough milk to make a fine paste.
  • Run the date paste through a sieve with small holes to remove all the skin. Keep the smooth date paste aside.
  • Heat the rest of the milk in a saucepan stir in powdered milk and mix well.
  • Reduce heat and stir in the date paste whisk until well incorporated and smooth. Heat the whole mixture until it is very hot but not boiling.
  • Remove from heat and let cool until it is still lukewarm . Do not let it cool too much. It should be hot, but cool enough for the finger test.
  • Once it reaches that temperature, gently stir in the starter culture plain yogurt and whisk until smooth.
  • Gently decant the date flavored mixture into containers in which you want the yogurt to set.
  • There are various ways you can incubate the mixture to form yogurt. I normally place the bowls in an insulated container which has a lid and leave it aside for 6 to 8 hours or until the yogurt has set completely it all depends upon the culture used, the temperature of the yogurt, and whether you want it sweet or sour.
  • If you have an oven, you can turn the oven on and heat it until it reaches 120 degrees F turn it off, place the yogurt container in the oven, close the door but leave the oven light on.
  • Incubate for 4 to 6 hours or more if you want a tarter yogurt. Check in between to see if it has set.
  • Once set, refrigerate until serving time.
  • Enjoy sugar free date yogurt topped with more dates!

Shrikhand is the easiest dessert recipe you can make, all you need to do is prepare hung curd, which is easy peasy, and just dump other ingredients and chill in the refrigerator

First step Make Chakka

To make a perfect Shrikhand recipe we need Chakka, basically, it is thickened strained yogurt, also known as hung curd.

First, drain the yogurt, put a muslin cloth and good quality kitchen paper over a strainer/colander. Place a bowl underneath the strainer to collect excess water. Pour the yogurt over kitchen paper to drain.

Next, gently squeeze the excess water from yogurt. Make sure not to squeeze out the yogurt. Place small heavy items such as pestle and mortar on top of the yogurt.

Keep the yogurt with a strainer and bowl into the refrigerator for at least six hours to drain excess water. Yogurt will become thick in consistency. Do not throw away water, use it into making Kadhi.

Second step make saffron-infused milk

If using saffron, soak in warm milk for 15-20 minutes.

Third and final step to make Kesar Elyachi Shrikhand

In a big mixing bowl transfer the strained yogurt. Add stevia or powder sugar and whisk vigorously to bring a creaminess into the Shrikhand using a whisker or spoon.

Then add saffron-infused milk and cardamom powder and mix well. You may add a very small pinch of crushed saffron threads on top of it.

For a traditional shrikhand recipe use finely ground regular sugar, just pulse regular sugar in a blender until it turns into powder.

Regular granulated sugar takes longer to dissolve or sometimes doesnt dissolve at all and interferes with the smooth texture of Shrikhand.

I wouldnt recommend using icing/powdered sugar or confectioners sugar, it contains cornflour thus not suitable for vrat or fasting.

Tips For Making The Best Traditional Shrikhand

Here are some tips for those who are making shrikhand for the first time.

The process of making Shrikhand at home involves waiting. The first part, if making yogurt at home, takes around 8-10 hours. If using a store-bought yogurt skip the first part.

The second part, drain the yogurt. For a thick, creamy, and rich Shrikhand the yogurt must be drained so well. The texture of the drained/hung yogurt should be similar to full-fat cream cheese. This process can take up to 4-6 hours.

The third part is to wait for Shrikahnd to chill in the fridge and develop flavors to come through.

Make sure the yogurt is fresh, not too sour, smelly, or slimy.

Always keep it in a cool place like a refrigerator or in an ice bucket/bowl with plenty of ice surrounding it.

Do not heavily flavor with saffron or cardamom, it will make the shrikhand bitter in taste.

If Shrikhand becomes too thick, add a tablespoon of milk and mix well. If it is too runny add a two tablespoons of milk powder and mix well.

If possible, make shrikhand a day in advance. Shrikhand tastes so much better the next day, it develops flavours and thickens whilst sitting in the fridge.
