Using Chocolate Chunks In Thm
Since chocolate is technically a THM-S food because of its relatively high fat content, the amount used in THM-FP and THM-E recipes must be limited to keep fat under the 5 gram limit. Ive figured out that 5 grams of these chocolate chunks is equivalent to about 16 Lilys chocolate chips. For example, a recipe of my THM-Fuel-Pull Chocolate Chip Cookies calls for either 72 Lilys chocolate chips or 30 grams of these chocolate chunks. Of course you dont have to measure and could add as much as you like if you dont mind the recipe being THM-S or a slight cross-over. Admittedly, they are pretty addictive. But these do have an intense and rich chocolate flavor and a little can go a long way!

- If possible, use the double boiler method for melting your ingredients. I find that it not only melts them together so much better, but your final result will be smoother and creamier.
- If you dont have a chocolate chip mold, you can use a loaf pan or square pan instead. Once the chocolate is set, you can chop it up into small chunks.

Easy To Make Yourself
Theyre actually really easy to make, too. I buy the Bakers Baking Chocolate unsweetened 100% cacao bars at Walmart for $1.98 each. Two bars makes about the equivalent in chocolate chunks as one bag 9oz of Lilys chocolate chips. My other ingredients probably cost just a few pennies per batch so, considering that Lilys is usually around $7 per bag, making your own is a cheaper option.
For me, each bar yields about 120 grams of finished chocolate chunks. I just melt them in the microwave, stir in the other ingredients, pour onto/into a parchment-lined pan or dish, chill until hardened, and then break up into chocolate chunks with a knife. I store them in a baggy in the freezer to use for all my chocolate chip needs.
These can be made into actual chocolate chips, if you prefer, but Im lazy and find the chunks sufficient for all my chocolate needs. For perfect chocolate chunks, I recommend freezing the melted chocolate mixture until frozen-hard, especially if its summer and/or its warm in your house. These thaw quickly and the chunks break more cleanly the harder/colder the chocolate is. You may have to put them back in the freezer one or two times while youre working if they start thawing too much.
I use the tip of a knife and apply a little pressure where I want the chocolate to break and it will smoothly break along that line. This reduces the amount of chocolate dust/crumbs so you will yield more chocolate chunks.

How Do I Know If My Chocolate Chips Are Dairy
The easiest way to know if chocolate chips are dairy-free is to read the ingredients list on the back of the package. Most likely, if you have milk chocolate chocolate chips, then you know these will contain dairy.
Look at the ingredient list to find any of the common names for dairy. Sometimes it will be under milk or milkfat, and other times it will be under less common names.
If you find any of the following terms in your chocolate chips, youll know they have dairy and youll want to avoid them:
- Butter solids
- Whey protein concentrate
- Whole milk

If you have a dairy allergy, youll want to make sure you dont see a statement on the packaging that says processed on equipment that also packages products that may contain milk. This means theres a chance for cross contamination and if youre extremely sensitive to small amounts of dairy, these products will likely give you a reaction.
If you have a dairy intolerance and can handle milk or dairy products at the trace level amount, these types of statements will probably be okay to overlook as long as there are no milk or dairy ingredients in the product itself. You know your body best, so use your best judgement on whether or not you eat foods with these statements.
