How Food Affects Blood Sugar
When you eat food, your body breaks it down into essential parts:
- Vitamins and minerals
All parts are necessary in a healthy diet, but the three types of carbohydrates are particularly important when it comes to your blood glucose level. While the general rule is that the more carbohydrates you eat, the higher your blood sugar level, not all three types of carbohydrates convert to blood sugar at the same rate.
The foods that fit into each carb category include:
- Starches, or complex carbohydrates: Starchy vegetables, dried beans, and grains
- Sugars: Fruits, baked goods, beverages, and processed food items like cereals or granola bars
- Fiber: Whole wheat products, chickpeas, lentils, berries, pears, and brussels sprouts
The glycemic index helps you find out which foods can increase or help decrease blood sugar levels. Based on a scale ranging from 0 to 100, high-indexed foods are rapidly digested, absorbed, and metabolized, resulting in marked fluctuations in blood sugar levels, while low-indexed foods produce smaller fluctuations in your blood glucose.
The American Diabetes Association advises adding lean sources of protein and heart-healthy fats to help reduce the overall glycemic impact of a meal or snack.
Hba1c Test For Diabetes Diagnosis
An HbA1c test does not directly measure the level of blood glucose, however, the result of the test is influenced by how high or low your blood glucose levels have tended to be over a period of 2 to 3 months.
Indications of diabetes or prediabetes are given under the following conditions:
- Normal: Below 42 mmol/mol
- Prediabetes: 42 to 47 mmol/mol
- Diabetes: 48 mmol/mol
There are two types of blood sugar levels that may be measured. The first is the blood glucose level we get from doing finger prick blood glucose tests. These give us a reading of how high our levels are at that very point in time.
The second is the HbA1c reading, which gives a good idea of our average control over a period of 2 to 3 months. The target blood glucose levels vary a little bit depending on your type of diabetes and between adults and children.
Where possible, try to achieve levels of between 4 and 7 mmol/L before meals and under 8.5 mmol/L after meals. The target level for HbA1c is under 48 mmol/mol .
Research has shown that high blood glucose levels over time can lead to organ and circulation damage.
Keeping blood glucose above 4 mmol/l for people on insulin or certain medications for type 2 diabetes is important to prevent hypos occurring, which can be dangerous.
Your doctor may give you different targets. Children, older people and those at particular risk of hypoglycemia may be given wider targets.

Cgm Studies In Nondiabetic Individuals
One study from 2009 entitled Reference Values for Continuous Glucose Monitoring in Chinese Subjects looked at the glucose levels of 434 healthy adults using CGM and found the following:
- On average, their daily glucose levels stayed between 70140 mg/dl for 93% of the day, with very small portions of the day spent above 140 mg/dl or below 70 mg/dl.
- Also, their mean 24-hour glucose levels were around 104 mg/dl
- 1-hour post-meal glucose values average 121-123 mg/dl for breakfast, lunch, and dinner
- 3-hour post-meal glucose values were around 97-114 mg/dl.
- Peak post-meal values appeared to be around 60 minutes after eating.
- Mean fasting glucose was 86 ± 7 mg/dl.
- Mean daytime glucose was 106 ± 11 mg/dl.
- Mean nighttime glucose was 99 ± 11 mg/dl.
A 2010 study, Variation of Interstitial Glucose Measurements Assessed by Continuous Glucose Monitors in Healthy, Nondiabetic Individuals, looked at a healthy population of 74 individuals that included children, adolescents, and adults during daily living using CGM. This research showed that:
- Glucose levels stayed between 71-120 mg/dl for 91% of the day.
- Levels were lower than 70 mg/dl for 1.7% of the time and greater than 140 mg/dl, only 0.4% of the time.
- Mean 24-hour glucose was 98 ± 10 mg/dl.
- Mean fasting glucose of 86 ± 8 mg/dl.
Compared to the first study mentioned, these healthy, nondiabetic individuals appeared to have a tighter range of glucose, spending the vast majority of the 24-hour period between 71-120 mg/dl.
Whats Your Risk Of Death From Undiagnosed High Blood Sugar
This old it may be, did demonstrate that the relative risk of death from heart disease and strokes increases by 1.5 times when your blood glucose after 2 hours post 75gms glucose test is between 140mg/dl 200mg/dl . See Red arrow in Chart below.
I want that figure to sink in for a moment. People who have a result between 140mg/dl 200mg/dl are not considered diabetic but prediabetic. That piece of research is telling us the risk of death of prediabetics is already high.
The sad thing is that millions of people like you and I are walking around not knowing that we may have pre-diabetes simply because we have not been tested.

Worse still is, that same research does tell us if you your blood sugar is above 200mg/dl your relative risk of death actually doubles.
John Fuller several years ago also did a classic piece of research where he gave 18,403 British men aged between 40 60 years of age 50gm of glucose load. John secured the results of the test and just simply followed the individuals up for 7.5 years to see what their mortality risk was over time.
He wanted to know if increases in blood glucose after 2 hours of the 50gm glucose load would be a risk factor for heart disease or death.
John and his colleagues found the men who had 2-hour blood glucose levels below 96mg/dl did not suffer any significant mortality.

How Long After Eating Does Blood Sugar Return To Normal
The blood sugar level falls back to a normal level around 1-2 hours after taking food. During this time digestion slows down and the sugar is absorbed by the tissue.
In diabetics, there can be a sudden spike in blood sugar after eating causing headache, dizziness and discomfort. This is called a post-prandial reaction. Normally, taking prescribed insulin medication can help mediate this problem.
Normal Blood Sugar Levels In Children
Younger than 6 years old mg/dL
Adults who are 20 years or older will have blood sugar levels that range between less than 100-180 mg/dL over the course of a day. When you wake up in the morning, your fasting blood sugar should be at its lowest because you havent consumed food for about eight hours. Why You Should Keep An Eye On It

Normal blood sugar levels in a person without diabetes can result in an A1c as low as 4.6 or 4.7 percent and as high as 5.6 percent.
Just a decade or two ago, it was rare for a person with type 1 diabetes to achieve an A1c result below 6 percent. The Nuances Of Low Glucose
In a recent study, researchers reviewed the published literature to see if low fasting glucose levels affected healthy peoples long term risks of health problems, like strokes and heart attacks. They found that healthy non-diabetic people who had baseline fasting glucose levels of less than 72 mg/dl had a 56% increase in all-cause mortality compared to people with normal fasting blood glucose levels. Also, the risks for heart attacks and strokes were higher in people with baseline fasting glucose levels less than 72 mg/dl. This result is likely due to the body releasing more epinephrine to counteract the low glucose levels too much epinephrine for too long leads to heart problems. Interestingly, people with low fasting glucose levels of less than 83 mg/dl but higher than 72 mg/dl did not have an increased risk of future heart attacks and strokes.
While there has been an association between low fasting plasma glucose levels and worse health outcomes, it is not clear whether transient dips in glucose levels during a continuous 24-hour period are unhealthy for nondiabetic individuals.
