How to Make Sugar Cookies – Easy Sugar Cookies Recipe

Mine baked just enough at 7 minutes, but keep an eye on them to see how they do in your oven. I removed mine when they had spread nicely, looked just done enough without looking undercooked, and the edges werent quite golden.

These sugar cookies are the perfect example of a treat that doesnt have to be fancy to be awesome. In fact, I think something simple like this is one of the most impressive things when done well and right. And these are SO right!

Why Are My Cookies Flat

There are five things that can cause flat cookies

  • Your oven thermostat is faulty. This is a very common baking issue. To fix it, purchase a hanging oven thermometer to hang off the center oven rack. Then you can adjust your oven temperature accordingly.
  • You did not use parchment paper. Parchment paper is a magical baking tool to help cookies keep from burning on the bottom, spreading too thin, or creating a consistent bake. Dont skip the parchment!
  • You used melted butter instead of softened butter. Yes, it does matter. When butter is melted, as opposed to softened, it has a different chemical reaction in the oven. Softened butter that is creamed well with sugar will cause cookies to rise before spreading. While melted butter creates a denser chewier cookie.
  • You mismeasured your flour. Here in the United States, most bakers dont weigh their ingredients. Therefore, its easy to mismeasure things like flour, which can be sifted or packed into cups. To ensure the best results: When measuring flour, stir the flour in the bag to lift and lighten it. Then scoop the flour and use the flat edge of a knife to level the top.
  • Your leavening agents are old. Baking powder and baking soda can lose their lifting power over time. I suggest buying new ones at the beginning of the baking season, even if the old ones arent past their expiration date.

    I dont have any secrets when it comes to cookies. I am here to help you make the BEST cookies! Here are a few tips to help you make perfect sugar cookies every single time.

    • Make sure your butter is at COOL room temperature. It shouldnt be super cold, but cool to the touch and NOT warm or greasy. When you press the stick of butter with your thumb it should give just a little. If your butter is too soft, the cookies will spread and be flat. I usually take it out of the refrigerator 15 to 20 minutes before I want to start mixing.
    • Dont pack your flour when measuring. Fluff the flour, spoon it into the measuring cup, and level. If you use too much flour, the cookies will be puffy and dry.
    • Use a large egg and large egg yolk. Adding a yolk will make the cookies extra chewy.
    • Dont be shy with the vanilla extract. I use 1 tablespoon, its not a typo:)
    • After you add the dry ingredients, dont over mix. Mix on low until just combined. It is ok if there are still a few flour streaks.
    • Roll the cookie dough balls in sugar before baking. The sugar will give the cookies extra flavor and pretty crackly tops!
    • Dont over bake the cookies! You want them to be soft and chewy! Check the cookies early to be safe, every oven is different.

    • SUGAR Granulated sugar is the main component of a sugar cookie.
    • VANILLA EXTRACT Never use imitation vanilla. You can add other flavorings like lemon or almond extract.
    • EGGS You want a large egg here so that you have enough moisture. If your egg is at room temperature it helps the egg incorporate into the mixture better.
    • ALL-PURPOSE FLOUR Nothing fancy here. All-purpose serves its purpose here. Make sure to spoon your flour into your measuring cup and not scoop it which leads to too much flour and crumbly dough.
    • BAKING POWDER This is our leavening agent and gives us soft sugar cookies.
    • SALT Just a small amount of salt brings out all the flavors.

  • Even if youre tight on time, make sure to get the dough in the fridge as it will spread less while cooking.

    To freeze the cookie dough: Roll the sugar cookies into balls and place on a baking sheet. Freeze the balls for 30 minutes or until firm. Transfer the balls to a freezer bag or freezer container and freeze for up to 3 months. When ready to bake, preheat the oven and bake! You dont have to thaw first, just add a couple of minutes to the baking time.

    To freeze baked cookies: Make sure the cookies are completely cooled. Place in a freezer bag or freezer container and freeze for up to 2 months. If you are going to stack them, you can put a piece of parchment paper in between the layers. Thaw and eat or even eat the cookies frozen. I love a good frozen cookie:)

    How To Keep Your Cookies From Spreading

    • Chill the dough. As mentioned above the cooler the fats in your dough the more they will not spread. As you roll the dough more it will start getting warmer so do it in batches.
    • Bake on parchment paper. Im a firm believer in this.
    • Calibrate your oven. Every oven is different and I think you would be surprised to see if your oven had a true temperature.

    How to Make Sugar Cookies From Scratch

    After cookie dough is chilled it often become firm.

    • There is no need to panic.
    • Cut the cookie dough disk into quarters.
    • Microwave one ¼ of cookie dough on high for 5-7 seconds. It should be sufficient to soften the dough so you can roll it out. However, you dont want it to be super soft.
    • Cut up remaining quarters into smaller bits.
    • Place softened/microwaved 1/4 of the cookie dough onto the work surface, between 2 rolling guides. Place rolling pin on top of the rolling guides and roll out the cookie dough. Cut out cookies and transfer them onto a light colored baking sheet lined with parchment paper.
    • Gather scraps and add one piece of chilled dough you set aside, re-roll and repeat.

    Piping Flooding & Painting

    Here are the techniques that elevate a simple sugar cookie to the spectacular. Piping and flooding can take a little practice, so take your time and consider making double batch of icing. And remember: extra sprinkles and dragées conceal all flaws.

      Piping

    • You can use the icing bag like a pen to draw lines, swirls or any other designs that are as simple or complex as you like.

      To pipe, hold the tip of the bag 1/4 inch above the cookie and about 1/8-inch away from the edge. The icing should be runny enough that you should not need to apply too much pressure, but it may be useful to practice on a plate or piece of parchment paper beforehand.

      If there are air bubbles in the pastry bag, a few gaps in the line could appear when you are piping. You can always quickly fill them in just make sure to do so before the icing sets.

      Painting

    • For a more modern, slightly neater approach to colorful decorations, try painting directly onto the surface of an iced cookie. No fancy skills required: If youve ever painted anything, you can paint a cookie.

    An Easy Sugar Cookie Icing

    For the frosting for these cookies, I did not use a royal icing, which I know is popular. Truthfully, I dont really love the taste of royal frosting, and I know many of you dont keep meringue powder in your cabinets or feel comfortable making egg white frosting.

    Instead, I used the same frosting that I used for my Galaxy Cookies. Its easy to make, easy to pipe, and dries hard for stackable cookies. This recipe uses light corn syrup for a nice shiny frosting.

    I frosted my cookies and then topped a few of them off with colored sugars, but if you want to skip the frosting you can sprinkle your cut-outs with sanding sugar just before baking. This is the way my mom always makes her sugar cookies, they still taste delicious!

  • Bake & cool. Depending on size, the cookies take about 12 minutes.

  • Have a little flour nearby when youre rolling out the cookie dough. Keep your work surface, hands, and rolling pin lightly floured. This is a relatively soft dough.
