Can You Freeze Decorated Sugar Cookies

How To Make The Best Sugar Cookies

We dont suggest freezing decorated sugar cookies. If your cookies are topped with royal icing, the moisture from the freezer could cause your icing to weep or melt, ruining your hard work!

If your cookies are decorated, we suggest storing them in an airtight container at room temperature. They should stay fresh for about a week.

Can You Freeze Sugar Cookies

Absolutely, so long as theyre not decorated. You can bake and cool your cookies ahead of time, then store them in the freezer until youre ready to decorate.

For best results, layer undecorated baked cookies in an airtight container or freezer bag with parchment paper or waxed paper in between the layers. Stored this way, your cookies can remain in the freezer for up to 4 months.

When youre ready to decorate, let your cookies come to room temperature before icing with buttercream or royal icing.

How To Make This Easy Sugar Cookie Recipe

  • First, preheat the oven to 350-degrees Fahrenheit, and have your favorite cookie sheet pan ready. I like to line with parchment paper or use a silicone reusable mat.
  • Melt the butter in a heat-safe bowl in the microwave. Be careful not to let the butter heat too long in the microwave, otherwise it can pop and sputter.
  • Stir the sugar, egg yolk, and vanilla into the bowl with the melted butter.
  • Next, sprinkle the flour, baking soda and salt evenly over the surface of the bowl, and stir everything together to combine.
  • Once the dough comes together, I have a trick for making all the cookies the same size that doesn’t require a scale. Use your spatula to press the dough into a flat disk in the bowl. By eye, divide the dough in half, making a line down the center of the dough with the spatula. From each half, you need to get 3 cookies, for a total of 6 cookies.
  • Evenly space the cookies on the baking sheet and bake for 10 minutes. The cookies are done when they spread and start to crackle on top. They might puff up in the oven, but as they cool, they will deflate and crackle beautifully. You can press a chocolate candy on top as they cool, if you like.
  • This recipe is based off the sugar cookie recipe in my third cookbook: Sweet & Simple: Desserts for Two, and so if you love a simple small batch recipes, you should really grab a copy. All of the recipe have less than 10 ingredients to make sweet, simple desserts.

    • The cookie dough can be made ahead and refrigerated or frozen. If going this route I recommend reducing the flour to 2 1/4 cups .
    • Just thaw frozen cookies in the fridge before baking.
    • Store baked cookies in an airtight container.
    • Baked cookies can be stored at room temperature, the fridge or the freezer.
    • Theyll last at room temperature about 3 days, in the fridge for about 1 week and the freezer up to 3 months.

How To Make Sugar Cookies From Scratch Pro Tips

    • Perfect sugar cookies should always have equal parts butter and sugar. The butter and sugar should be creamed together until the butter is lighter in color and ultra fluffy. You should be able to tell that the sugar crystals have broken down into the butter, because the mixture will no longer look granular. This usually takes several minutes to achieve.
    • For extra light and delicate sugar cookies, sift your dry ingredients. Measure first, then sift.
    • You need to use a generous amount of good quality sea salt and pure vanilla extract to bring out the best flavor in the cookies.
    • Do not over-beat the cookie dough. Think gentle thoughts.
    • Roll the dough into balls, coat in extra sugar, and press the tops flat with the bottom of a drinking glass. This creates a crispy glistening exterior and a uniform shape.
    • Do not over-bake. The moment the edges look remotely golden, take the cookies out of the oven and cool.

    Thats pretty much it!

    Stir In Remaining Flour

If you are using a handheld mixer, you likely will need to stir in the last of the flour with a wooden spoon or heavy-duty scraper. Stir in a little flour at a time to keep the flour in the bowl and not all over the counter. This also prevents pockets of flour from forming in the dough. Stir just until all of the flour is incorporated. If you overmix the cookie dough, the finished cookies may be tough. Stir in any remaining ingredients such as oats, nuts, and/or chocolate pieces.

How To Stop Your Cookies From Spreading In The Oven

Easy Cut Out Sugar Cookie Recipe | Wilton
    • Add cornstarch to the dry ingredients. I would recommend starting with a tablespoon of cornstarch per cup of flour. See how you like the consistency and adjust from there.
    • For cookies that spread less avoid using leavening agents like baking soda and baking powder. Your cookie will be a bit more dense but it will not puff up in the oven nearly as much.
    • For a recipe like this the chill time is only there to let you handle the dough without marring the surface of the cookies. Its not about how they spread in the oven. Recipes without cornstarch may need hours of chill time for the dough to fully set up.

    White Sugar + Brown Sugar

The other big thing here is the sugar. Naturally a sugar cookie is going to use white granulated sugar. Its just how it is. But part of what makes a cookie chewy is a high moisture content.

Brown sugar has more moisture than white sugar, because it contains a little bit of molasses. You dont want to overdo the brown sugar here, but I swapped out two tablespoons of white sugar for brown sugar and the result was fantastic. It makes a much softer and chewier cookie that stays fresh longer.

And just a little tidbit about baking cookies its amazing how much of a difference such a small change can make to a cookie. Just two tablespoons! When I used all white sugar, the cookies didnt spread as much . When I used just a bit of brown sugar, they spread just enough AND stayed soft for DAYS! And when I used just a bit more brown sugar, the flavor started to get a bit too off track and they spread more than I wanted, leaving me with a little thinner cookie with less defined edges. So I totally suggest sticking with it as I have it. The best!
