How Is Regular Maple Syrup Made
Most maple syrup is made by following these steps:
Research states that one of the most important aspects of making syrup is growing healthy trees each year. Maximizing the trees health means that the syrup will taste better. In the northeastern part of the United States, trees are tapped for maple syrup in late January or early February. This process continues into March and sometimes April.
The temperature has to be just right for the sap to start flowing from the tree. Warm days that range above 40°F and cold nights with temperatures below 32°F start off the tap for the year. The beginning of the seasons usually brings lighter syrup while the harvest during the late season brings a richer, deeper colored syrup.

This syrup is as thick and rich as a keto pancake syrup can get. It has a deep caramel color and its sweetened with monk fruit extract and flavored with natural maple flavor making it a great low carb syrup and natural alternative.

Choc Zero maple syrup is not the syrup with the lowest calories but it has one of the most clean labels and uses almost only all natural ingredients. It has no added preservatives and its GMO free. They also dont use water to dilute the syrup so the texture is as thick as it can be.
The only downside I think this brand has is the flavor. You can definitely taste a bit of the monk fruit sweeteners. I dont mind it all but the lightly fruity flavor its there. However, if you are used to how monk fruit taste then this is a great option to get!

What Should The Consistency Be Like
I hate trying to describe what the consistency should be in recipes. Its so hard to describe it exactly, which I guess is why we take a lot of photos.
But I will say the first batch I made I added too much xanthan gum and it ended up being way too thick and gummy. The texture just wasnt right.
The second time was a charm! I used less xanthan gum and actually only cooked it for about 3-4 minutes. You dont want it to thicken up too much. It still needs to be liquidity enough to easily pour. Keep in mind that it may thicken up a little bit more while its cooling, so dont think that it needs to be too thick.

Turning A Granular Sweetener Into A Powdered Sweetener
Did you know that you can turn granular sweetener into a powdered sweetener? When you need powdered but only have granular in the house, its ok we can fix that.
See how simple that is? I do always tend to buy both powdered and granular sweeteners, but this method works when you run out of powdered and need it in a pinch.

- Water 2 cups of water, its our base.

There is no clear cut answer when it comes to sugar-free syrups and what’s best for a ketogenic diet. Almost all of the sugar-free syrups listed below have nearly the same amount of net carbohydrates and the same impact on blood sugar.
The best sugar-free syrup comes down to personal preference, and of course, accessibility in obtaining said syrup.
As for MY personal favorite, I prefer Walden farms syrups due to its thick consistency and flavor profile. In particular, I enjoy the regular pancake syrup by Walden Farms.
I’ll not only use the Walden Farms pancake syrup on keto-friendly pancakes and waffles but also use it to drizzle on some greek yogurt or berries for a refreshing dessert.

How To Make Keto Sugar
Follow these few simple steps to make the best sugar-free maple syrup.
Step 1: In a small bowl add the golden monk fruit, xanthan gum, and salt. Stir together and set aside.
Step 2: Pour 2 cups of water into a saucepan and turn on low heat, bring it to a simmer. You do NOT want it to boil at any point.
Step 3: Now we need to add the sweetener to the water. I recommend adding it one tablespoon at a time. It dissolves better and prevents any clumping. Continuing stirring for about 3-4 minutes. You dont want it to thicken too much. You still want it to be liquidy enough to pour.
Step 4: Take off the heat, then add the vanilla and maple extract. Stir again.
Step 5: Let cool then transfer to your jar of choice.
What Sweetener Should It Contain
The most common sweetener that you will see mentioned in the ingredient lists of such sugar-free syrups is sucralose .
But is it really keto-friendly?
Sucralose is generally considered a safe sweetener choice for people who follow a ketogenic diet.
On its own it doesnt trigger insulin response, but its often accompanied by maltodextrin that may trigger such a response.
Even though there are sugar-free sucralose-based coffee syrups that dont contain maltodextrin, you shouldnt have too much of them.
There is evidence that sucralose has a disrupting effect on the gut microbiota, which is why you may want to avoid overdosing and stick to the recommended serving size, found on the syrups label.
It is overall better to opt for a keto-friendly syrup that contains natural sweeteners such as stevia, erythritol, or monk fruit, but it seems like there arent many products that are based on them.
Those that are, often contain other unwanted substances .
No matter what sweetener your keto coffee syrup contains, you shouldnt have too much of it, as it may cause digestive issues.
Furthermore, even though these syrups are marketed as zero-carb and zero-calorie this doesnt necessarily mean that they are free of carbohydrates and calories.
This makes it possible for companies to play around with their products serving sizes, making them unrealistically small, so that they can get the zero-carb label.

Certain sugar alcohols may cause GI discomfort, bloating, gas, and other adverse side effects in some while not affecting others.
So youll not only need to consider the type of sweetener in the syrup but also learn how it affects your body specifically.
Stevia and monk fruit sweeteners are two common zero-calorie sweeteners used in sugar-free pancake syrups that actually come from real foods instead of a chemical combination made in a lab.
