Id only been doing low carb for about 8 months at the time. But Id always loved graham crackers and I really wanted to enjoy them again.

  • Preheat oven: 325°F.
  • Mix together dry ingredients: Add flour, oat flour, coconut sugar, cinnamon, baking powder, baking soda, and salt to a large bowl of a stand mixer with a paddle attachment*. Turn on low to blend.
  • Add in wet ingredients: Add melted coconut oil, water, maple syrup, and vanilla extract to the bowl. Continue to mix until the dough is formed.
  • Roll out the dough: Transfer dough to a sheet tray lined with parchment paper. If your sheet tray has raised sides like mine, you will need to just place the parchment paper on the counter for now. Top the dough with another piece of parchment paper and start to roll out the dough into a large rectangle. The dough needs to be about 1/6-inch thick .
  • Cut into squares: Use a pizza cutter or knife to cut the dough into 3 squares. Using a fork, poke 2-3 sets of holes in each graham cracker.
  • Bake: Transfer the parchment paper and graham crackers to the sheet tray if you havent already. Bake for 20-22 minutes or until the graham crackers start to brown.
  • Cool: Allow graham crackers to cool. Once cool, use the pizza cutter or knife to go back over the cuts to separate the graham crackers.

    • This recipe is all about the graham crackers, so be sure to use ones you love the taste of. I’ve listed some of my favorite brands below. Here I used my gluten-free graham cracker recipe because I love the flavors and friendly ingredients list. One batch makes the perfect amount of gluten-free graham cracker crumbs for crust, but I recommend doubling the recipe in case you need to snack on some first!
    • Melted butter brings the crust together. Use vegan butter if you like to make the crust dairy-free. Here I used Miyoko’s vegan butter.
    • A little sugar adds a bit of extra sweetness and richness. I used coconut sugar here to keep the crust refined sugar-free, but any sugar will work.
    • A little cinnamon adds extra flavor and salt sharpens the flavors. Feel free to add any other flavors you like: vanilla, nutmeg, cardamom, and ginger would all be nice!

    Its really surprisingly easy and quite similar to making any keto crackers, except that you add a little sweetener and some cinnamon.

    Flours: I always use almond flour for my homemade graham crackers, because it crisps up nicely when rolled out and baked. I dont recommend coconut flour, it tends to make things a bit chewy.

    If you are allergic to almonds or other nuts, your best option here is actually sunflower seed flour. It can be used to replace almond flour in a 1:1 ratio. Be forewarned, however, that it reacts with leavening agents like baking powder and can produce a green color as it cools. You can offset this by using a tablespoon of acid like lemon juice or apple cider vinegar.

    Sweeteners: When I first created this recipe, I had never even heard of Swerve! I used plain erythritol and added a little molasses for color and flavor. Then I started using Yacon syrup for the color and flavor.

    But now that Swerve has come out with a brown sugar, its my go-to for this graham cracker recipe. It gives exactly the hint of color and rich flavor I am looking for.

    Rolling out the dough: You really want to roll your dough thinly enough that it crisps up nicely, but not so thin that your crackers are really fragile. Id say less than 1/4 inch thick works best. Try to roll it as evenly as possible so they all cook evenly.
