Jen Yee, head of the pastry program at Lafayette in New York City, recommends making two consistencies of royal icing, one for each step. “You want a firm icing for the border, and a looser one to fill or ‘flood’ in the border, which can be done by adding a touch of water to your ‘flooding’ icing,” she says. Baking sugar cookies for Christmas? Let me help! Today Im sharing 5 easy and approachable ways to decorate Christmas cookies. If youre intimidated or nervous about making royal icing and creating adorably festive sugar cookies, this post is for you.

Before we begin decorating, lets review my sugar cookie recipe. This recipe, pictured below as adorable little hearts, have slightly crisp edges and a nice flat surface for decorating. They have a pronounced vanilla flavor, super soft center, and taste unbelievable on their own.

How To Make Cookies Decorated With Royal Icing

21 Of the Best Ideas for Decorated Christmas Sugar Cookies

First make a batch of the homemade no spread sugar cookies and allow them to cool completely. You can use any shaped cookie cutter that you want to with that recipe and the cookies will be soft and chewy and not spread at all when baking.

Next make royal icing in the colors that you want to use. This royal icing for cookie decorating recipe will make a 1 cup batch of icing, that is enough for about 12 cookies, just double, triple ect the recipe to make as much frosting as you are going to need. I tend to make a batch for each color I am going to need just to make my life easier.

Once you have all the supplies needed it is time to get started decorating the cookies.

You will need to start out making a outline with icing that is about a 20 second consistency. Let it dry for at least about 10 minutes.

Once that is dry you can keep the thickness and spread the frosting.

If you are wanting to use the flooding method, after piping the frosting, thin the remaining frosting to 6 second frosting and pipe it into the outline.

After you fill in the cookie you will want to pop any bubbles with your pick.

After flooding or spreading frosting on the cookies you can add any details you want to. When I am making simple cookies like these circle ones, I like to make the tye-die look by spreading the frosting and then also put an additional pipped boarder on the edge of them.

After you have decorated the cookies, let them dry completely before packing up and storing in an airtight container.

Thin, flat cut-out cookies like sugar cookies and gingerbread cookies are the best candidates for decorating with icing. These cookies are sturdy enough that they wont crumble as you work with them and have large, flat areas that are just begging for a bit of decoration.

Make sure your cookies are completely cool before you start decorating or the icing will melt as you decorate. I usually find it easiest to make the cookies on one day and decorate them the next. Since the decorating itself is fairly time-consuming, I also sometimes set up a cookie-decorating station on my counter and decorate a handful of cookies at a time over the course of a day or two.

Color The Buttercream With Gel Food Colors

This step does assume youve already made both your sugar cookies & your buttercream, and youre ready to color the buttercream!

Important tip: Color the frosting really soon after you make the buttercream. Itll be far easier to mix colors into the frosting and spread the frosting onto the cookies before that icing begins to stiffen up!

This part is fun & easy! Youll scoop out separate piles of frosting onto paper plates, and add a few drops of coloring maybe start out with 1 or two at a time to each dollop of frosting and mix with the butter knife. You can play around quite a bit with colors thats what I do!

Super important tips:

  • Specifically for spreading the frosting on the cookies: youll need to use the buttercream frosting for this process fairly soon after you make it within an hour or so, or else itll get too stiff to spread easily.In other words: I wouldnt make the frosting ahead of time Id make it, color it , and then spread it on the cookies soon after the cookies youre decorating with sprinkles, as well as the cookies that youre piping but that you want to have a base coat.
  • Remember to reserve some white frosting! Unless you know youre not going to use any white for any reason, youll want to make sure you dont get too carried away with coloring the frosting that you forget to leave some of the white behind.

    It’s good practice to prepare all of your desired icing colors and consistencies before starting to decorate. There are two types of piping bags that you can use: tipless piping bags or piping bags with metal tips. With tipless piping bags, you simply need to snip the tip to the size you want and pipe away. These come in handy when you want to get super-small lines, but piping bags with metal tips are helpful in standardizing your piping size. For cookie decorating, you’ll likely use round tips that range in size from #1 to #5 . Metal tips also come in a variety of shapes while some shapes can be helpful for decorative flair, for cookie decorating, you’ll use a round tip the majority of the time. We recommend using a size 1 or 2 tip for most piping to achieve the cleanest thin lines.

    For flooding, there’s no need to use a metal tip, as you’re concerned with covering a larger surface and not the detail of the lines. Simply snip the end of the disposable piping bag to create a small opening, approximately 1/8-inch, and pipe directly onto the cookie.

    No Chill Sugar Cookie Dough

    This is my favorite go-to recipe during the holiday season. Most sugar cookie dough recipes benefit from chilling or resting in the fridge. Here is a sugar cookie dough that can be immediately rolled out, stamped, and baked!

    No chilling necessary! Simply mix together the dough and start stamping out cookies immediately!

    Best of all, these cookies can be baked ahead of time. Bake up to three days in advance. Store in an airtight container until you are ready to decorate.

  • Pick your favorite cookie cutter shapes. I highly recommend using metal cookie cutters. They are much sturdier than plastic ones and very easy to clean. I used the Wilton snowflake cookie cutter set and the Wilton 12-piece holiday cookie cutter set .
  • The cookie dough easily comes together in a stand mixer. The dough needs to be used immediately after mixing. Roll dough out to about 1/4-inch thick on a flour surface.
  • Dip cookie cutters in flour before stamping. This will ensure clean lines and prevent the cookie cutter from sticking to the cookie dough.
  • Stamp out cookies! Try to utilize as much of the cookie dough as possible. For example, when stamping out Christmas trees invert the stamp after each cookie to maximize dough usage.
  • Gather scrapes and re-roll dough as necessary to stamp out more cookies.
  • Tips for Baking Sugar Cookies:

    Baked and cooled cookies can be stored in an airtight container for three days before decorating.
