There are a few different options for sweeteners out there, but we went with the tried and true powdered sweetener with a 1:1 ratio to sugar. We found powdered sweeteners to work best because they will mix into the keto ice cream without becoming grainy or crystalized.

Its pretty affordable, but is also a little less sweet compared to sugar so you will need more to make a traditional ice creams level of sweetness.
  • Powdered Swerve Another 1:1 sweetener option for sugar, but unlike the Lakanto brand Swerve does not use monk fruit in their blend.

There are other liquid sweetener options that you could add into the heavy cream like stevia or monk fruit, but we find they can end up a little bitter. Its best to sweeten your creamy keto soft serve with a regular powdered sweetener.

Starting off making homemade low carb vanilla ice cream is honestly the easiest way to go in the beginning and makes the best base you can then add to. And lets face it, vanilla is always such a classic. If you can master vanilla ice cream then you can start experimenting with other flavors, like chocolate, coffee, strawberry and so many more.

Vanilla works great as a base flavor that you can then use with many add-ins like fruit, chocolate chips, cookie dough, nuts, etc.

Keto Sugar Free Cranberry Sauce Recipe (10 Min!)

I resisted buying an ice cream maker for a while, but am so glad I did! It makes making homemade sugar-free ice cream so much easier and more consistent.

If you have an ice cream maker, simply transfer the ice cream mixture to it and let it churn until the thickness is similar to soft-serve ice cream. It typically takes 15-20 minutes in my machine, but everyones is different, so follow your manufacturers instructions.

After churning, you can eat the soft-serve as-is if you like. Otherwise, transfer to your container of choice and freeze for a few more hours to get more firm keto friendly ice cream.

TIP: Using an ice cream maker reduces the need for MCT oil or powder, but I still prefer to include it for the best texture, plus healthy fats for keto!

Ice Cream Is Too Icy/not Creamy

If youre ice cream isnt creamy and more icy then there may be a couple reasons why:

  • You didnt use full fat milk, cream or coconut milk. You need the fat in ice cream to make it creamy. So make sure to use heavy cream, or full-fat coconut milk if on keto. If not on keto then use either whole milk or even half & half.
  • You didnt use xanthan gum. One of the reasons for using this is that it helps ice crystals from forming, otherwise it can leave you with icy ice cream, instead of creamy ice cream.
  • Take it out of the freezer for a few minutes before scooping. Sometimes the ice cream will seem too hard when you first take it out of the freezer, but it softens up if you leave it on the counter for a few minutes and will scoop out perfectly.

How To Store Low Carb Ice Cream

Store this low carb ice cream recipe just as you would any other ice cream in the freezer. Since we dont have and yucky artificial ingredients in there, it can harden a bit more than desired over time.

TIP: If it hardens too much, just let it sit on the counter for a bit to soften enough to eat and use a wet ice cream scoop to get it out. Its worth it!

How To Add Flavors To Ice Cream

Ice cream comes in hundreds of different flavors, so why not spice your vanilla ice cream up a bit. A few ideas to take your homemade ice cream to another level:

  • Vanilla Bean Split a vanilla bean lengthwise and scrape out the seeds into the cream mixture while on the stove, and add the scraped pods for even more vanilla flavor.
  • Infuse herbs and spices into the mixture as you heat the milk. Make sure to strain them out before continuing on with the recipe.
  • Add extracts such as lemon, peppermint, or almond.
  • Fresh fruit Sprinkle your fruit with a low carb sweetener like granulated monk fruit, and crush it using a potato masher or a muddler. Add this to the milk mixture.
  • While the ice cream is churning and reaches a soft serve consistency, add in some chopped nuts, chocolate chips, chunks of fresh fruit, etc.

How To Make No Carb Ice Cream

Keto Gelato Bars Recipe (Low Carb Ice Cream)

In a saucepan, combine unsweetened almond milk, low carb granular sweetener , coconut oil and vanilla extract. Always check the ingredients for vanilla extract to ensure that it is pure and doesn’t contain any fillers!

Cook over a medium heat until the sweetener has dissolved and the coconut oil has melted. Test for sweetness and adjust if necessary.

Transfer the mixture to a blender. Add some xanthan gum and blend for a minute so that the mixture is fully emulsified.

Pour the mixture into a bowl and chill in the fridge for an hour.

Churn in an ice cream maker then spoon it into a container and freeze until required.

The final dish is a pleasant and refreshing ice cream. It isn’t as creamy as traditional ice creams, but at 0.2g net carbs per one-cup serving, you can’t complain!

This ice cream does go super hard in the freezer, so for best results I’d recommend eating it the same day that it goes into the freezer.

Like most recipes the nutrition facts really depend on how you customize it. Our gluten free chocolate ice cream per serving has 231 calories, 22.5 grams of fat, 1.75 grams of protein, 5.5 grams of carbs, and 4.75 net carbs.

If you made the ice cream double chocolate, chocolate chip the calories and fat macros would go up. However, just following the base recipe given with cocoa powder those are the macros youre looking at.

My Take

This is technically sugar and fat-free, although maltodextrin behaves similarly to sugar in terms of glycemic response.

It is fat-free and technically sugar-free, but I would proceed with caution with this one, and avoid it if I were following a ketogenic diet.

Ice Cream Is Too Soft/doesnt Freeze Well

If youre Keto ice cream is too soft or didnt freeze well then here may be a few reasons as to why:

  • The ice cream machine bowl is not cold enough this is seriously a key to making good ice cream guys. If the freezer bowl isnt completely coldmore like frozen, then your ice cream will never freeze either and it will be too soft. I recommend freezing it for 24 hours. Another trick is that I always keep the ice cream bowl in the freezer so I dont have to worry about it.
  • Poured a warm ice cream base into the ice cream machine If your low carb ice cream base is at room temperature then it will not freeze well. After the base is cooked on the stove and has cooled for 20 minutes, place it in the fridge for 90 minutes, then stir, and place back for another 60 minutes. This is to ensure your base is cold enough to be churned into ice cream.

A good rule of thumb to make sure your ice cream isnt too soft is the expression The Colder the Better!
